Favorite Root Vegetables
All right, it's getting chilly up here, so I wanted to ask - what's your favorite root vegetable besides the usual carrots and potatoes? I'm seeing such an array of turnips, rutabagas, parsnips and celeriac, and I want to know what's good and what I should do with it.
I made the turnip caldo verde from Batali's trip to Spain, and I want more!

My favorite is gobo for stews, soups, and pickled. There's daikon also...for the same reason! There is no such thing as too much grated daikon with tempura tsuyu, and I love a good takuan.

beets are without-a-doubt way up top for me. raw, roasted, pickled...and especially in soups. i tried this one last year with a bit more ginger than called for.

Roasted beets tossed while still warm with olive oil, lemon juice and paprika. Also, steamed rutabagas mashed together with butter and sour cream. I make this every Thanksgiving in memory of my dad. He and I were the only ones that would eat it during the holidays. It was "our" side dish.

Parsnips...I'm with Pavlov. Last week I made a wonderful cream of parsnip soup, with some celeriac, celery & a potato thrown in for good measure. After pureeing everything, I crumbled a small amount of Point Reyes Blue cheese in for good measure...it was heaven in a bowl! Blue cheese & parsnips go together very well.
Celeriac is my second favorite root veggie...I discovered it last year...I just wish it wasn't so expensive.

Parsnips cooked around a roast or your turkey, beets sliced and roasted then tossed into sauteed onions and bacon add the greens too! Mashed rutabagas - I'm getting hungry for some ROOTS!!!!

I love beets - in homemade borscht or pickled raw in the fridge. Celeriac and leek risotto is also a winter favorite, and sweet potatoes roasted in the oven with olive oil, salt, and a bit of smoky chile powder and a pinch of cayenne - yum.

Roasted beets, done plain and simple. And I'll toss anything that came from the ground with rosemary and olive oil and throw it into a hot oven.

favorites for me is sweet potatoes, parsnips, carrots and onion... roasted very simply in the oven. so good!

When I think of my mom's chicken soup, I think of turnips, parsnips and carrots. They're all great root veggies!

Beets, parsnips, turnips, rutabagas, celery root, sweet potatoes, yams, carrots - all of them are on my favorite list - but beets and parsnips win! I could eat them until I pop!

I like them all, but winter makes me think of rutabagas. Unadorned except for butter and a little salt.
