Cooking Challenge

What would be your biggest cooking challenge? Mine would be making cheese(always wanted to do this), oh and croissants.

I would love to make cheese. And perhaps egg rolls. I almost always end up not making something deep fried because of the splatter mess and the storage space used in the fridge for the leftover oil. And then there's the calories of course. Truly thought, my biggest challenge ever would be getting my husband and my teenage son to eat any green vegetable-- raw celery, raw peppers, and lettuce do not count! On the other hand, my 10 year old grabbed an asparagus spear from my plate at 6 months of age and gummed it to death. He now chews. Things could be worse.

Deep frying and making gum paste flowers.

Didn't used to be a problem, but after we moved to high altitude, dry conditions, my timing got all out of whack, and it was a challenge to serve everything at the same time and have it all hot. I'm getting better at it, but some days it's still a jumble.

My two favorite foods - Thai and Indian. I don't even bother. Both are way too complex for me to try. That's what good takeout is for. :)

Dough (doh!)....the only food that makes me cry. I've thrown a wheat field in the trash. Yeah, not even close to being edible.

Making puff pastry dough (I still struggle with pie crust from time to time.) and royal icing/buttercream flowers. I curse the Wilton Rose.

I've never been able to figure out how to make homemade yeast doughs and breads.

Croissants definitely. I think it is more of a patience issue then a lack of knowledge on my part tho.

I used to have this thing where I could do cream cheese frosting to save my life. I failed doing it like 3 times but I finally conquered it this last weekend and people at work told me that it was the best Carrot Cake they have ever had. Victory!
My next conquest is to do a quick bread without overbaking the sides and underbaking the middle. Always have the tendency to do one or the other.

Home canned dill pickles. Every year I try, every year I'm disappointed.

Any bread receipe. If someone has a good one that is foolproof please share.

a good dough for spinach pies

I just made croissants for the first time this week and they turned out almost perfect. I added almond paste to half. YUM! The last time I tried I was 15 and they were a total failure.

I too would really like to make cheese. I've asked for one of those cheese-making kits for christmas and am looking forward to homemade mozzarella next year.

I think my challenge now would be spun/blown sugar. I've done some sugar work, but nothing too fancy. Or maybe a real wedding cake. I did one before, but due to time constraints (and being the photographer, shower organizer, and invitation maker) ended up renting pans from the library, making cakes from a mix, putting it together in rather a hasty manner, covering it in whipped cream icing, and covering the exposed top of each tier with fresh raspberries. It worked, but I'd like to do better.

I REAL apple strudel

Pasta.

Pie crust.

Deep fried anything, or anything involving a candy thermometer (besides using it to test water for yeast).
