Cookin' Turkey the day before?

Has anyone cooked the turkey the day before? Any thoughts/Tips?

I would worry about it being dry the next day -- because you'd definitely need to reheat it. Unless you had a fool-proof moist turkey secret, and then a killer gravy to hide any traces of slight woodiness (a term I use to describe dry, day old turkey) I'd say don't do it.
On the other hand, if you could find a way, it would certainly free up the oven for the myriad of sides that are typically made.
So, I wasn't really very helpful, was I?

I do it every year. Never dry! Simply reheat by running slices through hot stock. The time- and space-saving aspect on the big day is wonderful.

Last year, the St. Louis Post-Dispatch had a story on a family that does a huge gathering on Thanksgiving. They do their birds ahead. They slice them, layer the meat in roasting pan (I'd probably use disposable ones, but I'm not sure why....) and pour the cooking juices and/or gravy over them. They then cover the pans well with aluminum foil and refrigerate. They reheat in an oven. I almost did that this year, putting a layer of stuffing between the bottom and the top, but plans were changed.

@ lemons....that sounds like a great idea! A Stuffed Turkey 'casserole' ;).

What about a thin layer of cranberry sauce as well?
