Cookie exchange
Instead of baking cookies for the cookie exchange I want to make a bar type cookie. I will be making a raspberry filling one and would like one for lemon. Any recipes?

I like a layer of lemon pound cake, topped with a layer of lemon/anise shortbread and lemon curd. Great with slivered almonds as well.
Really just bake a good pound cake recipe in a jellyroll pan and cool. Spread with lemon curd. Bake a same-size pan of a simple shortbread with a little lemon ad anise extracts (if you like) and layer over the curd. Chill well and slice.
The curd softens both the cake and the shortbread and makes a really nice bar after about 24 hours. I love it with the almonds on or in the shortbread.
You can even drizzle a glaze on (plain, raspberry, lemon, etc...) if you like.

Lemon bars have been around for ages. Here's a recipe that sounds like the one I've used.
