Caramel Apple Pie

Now that we're on the topic of apple pies, I'm craving a good Caramel Apple Pie. Most recipe's I find just used a jar of caramel on the top of the pie after its cooked. Sounds kinda generic to me. Anyone have a good recipe?

I think a good caramel tart tatin is absolutely delicious, just make some caramel, dump it in a cake tin, arrange apple slices over it then pastry, cook it and then flip it. mmm

A friend made a brilliant one from I think an Epicurious recipe for Thanksgiving a few years back. They have a zillion apple pie recipes though - I would check there. This isn't the one she made but it sounds delicious: Caramel Apple Pie

OOOHH!! I'm making a red wine caramel apple pie for Thanksgiving this year! I've made it before but have never written the recipe, basically it's an apple pie but you toss the apple slices with a homemade caramel that has red wine cooked into it. Those are horrible directions, I know.

I made some a few years ago, but I just took some caramels and cut them into tiny pieces and added them in with the apples. Ex loved it, I thought it was too sweet.

onepercent, you can toss the caramel sauce with the apples before filling the pie crust. Or as huneybumper mentioned, you can toss the apples with quartered caramels. A praline topping would spruce up any pie and would be good on a caramel apple pie, too.

If you opt for the pre-purchased caramels, don't forget to unwrap them. Ha - just joking. Doesn't it make you laugh when recipes remind us to unwrap candies before using them in the recipe? ;)

I know I'm going to get a lot of shock and awe responses on this one, but Costco has a really decent caramel apple pie -- it's great in a pinch if you need a quickie dessert and don't have the wherewithall to bake one yourself. The top is crumbly and yummy and then there's caramel laced throughout. The apples are decently sweet and the crust is good.

@holdthe mayo - in our recipe-writing class in culinary school, the teacher told us a story about when crockpots first came out. Apparently a recipe included in the booklet with the crockpot said to put a can of soup into the crockpot, and there were a number of injuries reported because people were literally putting in the whole can! So now I always over-explain everything in recipes. If only I could give step-by-step instructions for HOW to unwrap the caramels... :)

T\I seem to remember there was a carmel applie pie that was one of the winners in the Pillsbury Bake-Off in the early 1960s.

@CookiePie...Stories like the can of soup in the crockpot always make me giggle. I guess what's a given for 99.9% of people is something that's out in left field for everyone else. There might be someone out there right now making those peanut butter blossom cookies with the Hershey's Kisses still wrapped in their shiny foil wrapping. :)

Ahh, juliebugs...maybe there are some people here who take offense to eating a purchased pie (from Costco!) but I wouldn't be one of them. Just don't forget to remove the wrapping before consuming it. (Big smile!) :)

OT but my hair dryer came with a warning to not use while sleeping. Huh? Should have warned to drink a cup of caffeinated coffee first.

@SavtaShayna ~ I remember hearing about that pie, too - really that long ago? Just looked it up - there was an apple pie in '62. GMA had an apple pie contest and the 2001 winner was Crunchy Carmel Apple Pie (the winner was from Carmel, Indiana - that's why she spelled it that way, but it does have caramel as an ingredient). Prepare your apples like normal. Get a can of sweetened condensed milk and boil it for 2 hours. You'll get the best Dulce de leche you have ever tasted pour that on the Apples bake and serve.

I make a butterscotch apple pie by making homemade butterscotch from 1 cup brown sugar, 1/4 cup butter and 1/2 cup cream. It is then poured over the apples prior to the top crust being put on. My recipe is at the end of this article I wrote about entering a recipe contest. The butterscotch makes the pie very rich.

@nhfoodie ~ I've done Dulce de Leche in the can of sweetened condensed milk, also. I use a large stockpot, and make sure the can is always submerged, simmer for 3 hours, then turn off pot and take out when cooled - usually the next morning. You can also use a churchkey to open a hole in the top and cover up to an inch below the top and cook, if you're afraid of the can exploding (will only happen if you let the water boil away).

@juliebugsmama: ditto the Costco caramel apple pie. Costco's pies are as good as homemade especially when made a part of the orgy of food always spread at most family gatherings. Dazzle them with a few made from scratch dishes, but that pie serves at least 12 and is delicious.

Not a pie, but here's Gail Gand's wonderfully whimsical recipe for Warm Taffy Apples with Cinnamon Twists, individually cooked apples with a puff pastry "stick," to mimic caramel apples. Haven't made these yet, but they look so perfect for autumn.

@ nhfoodie and PerkyMac I do the sweetened condensed milk can boiling thing as well. I've never understood the problem with exploding cans. I keep at least 2 inches of water over top of the cans, and use a rack on the bottom. Water should be circulating all around the cans for optimum safety. If you don't have a rack, use aluminum foil snakes.

I tried a caramel apple pie with the caramels,and yup,i actually unwrapped them,lmao.It seemed kinda watery and didnt have any caramel taste whatsoever.I used like a pound of caramels.Now.....whats all this about boiling a can of condensed milk?You guys are saying that you can boil it unopened?How does the condensed milk change viscosity and flavor if its not opened?Thanks again!!!

@1% ~ sweetened condensed milk. evaporated milk is condensed milk and you don't want that. I use Eagle brand and always do several cans - they keep. Try it, you won't believe your eyes or your taste buds!
