Brining Turkey

The recipe for the brine calls for 1/2 TBSP of Candied Ginger. Where do I find Candied Ginger? Can I make it? Thanks.

In my coop/organic market it is with the baking stuff/spices. Also often found with the candies. Also sometimes with OTC medications because people use it for nausea. Good luck.

I saw some at Whole Foods, but it seemed a bit expensive. I'll decide when I swing through tonight to pick up my turkey, but if either or us is going to make it, I found this:

I would think that in a pinch you could use a small amount of fresh ginger or some powdered but the candied imparts a certain flavor. If using the powdered add to the brine while hot so that you can test the strength by smelling the brine

Just a comment about brining in general. All too often brining recipes do not say anything about what kind of bird you are going to brine. Because many birds are already seasoned with a good amount of sodium in the solution that has been injected into the bird, you may end up with a too salty bird. Also brining too long can change the texture of the meat and not for the better. I recommend at least a fresh turkey that has no added solutions. Also, frozen turkeys have "so much more juice" as a friend told me, but often that is added water and the up to 12-15% solution that has been added. If you can go with fresh. I ordered a free-range organic and I will let you know if it was worth the extra cash. Happy Thanksgiving!!!!!!

Just a caution if you are concerned about sodium. Very few brining recipes talk about the type of bird you are using. I would suggest a fresh bird that has not already been injected with up to 12-15% of a solution that contains a number of things including salt (sodium compounds). Friends like to tell me that they like the frozen birds because they are so juicy--the "juice" is water or that added solution.....Get a fresh bird if you can with nothing added and brine it. It's fairly simple to make your own candied ginger, but if your only going to use 1/2 tbsp of it, it may not be worth your time (all in it will take at least an hour with prep, cooling, etc.)

Here's an out of the box solution. A lot of serious cocktail lounges use candied ginger as garnish these days. It used to be special, but it's not anymore. Have a cocktail and ask the bartender for a couple extra pieces...

Or you may have to buy it.

Try Trader Joe's. It is fairly inexpensive there.

Also, in a pinch, I'd use a quart or two of good quality ginger ale in the brine instead of water and some sugar.

Yes, I get mine at Trader Joe's. It's with the other dried fruits. It's yummy as a snack so even though the recipe may only have 1/2 T, it's worth getting a bag (not very expensive at all).

Now I am really confused about brining my turkey. I bought "fresh" NEVER frozen organic BUTTERBALL TURKEY, label indicates it has no additives and has never been frozen...but in looking at the nutrition info it states : 3% ( 70 mg ) so to brine or not to brine...that is the question. HELP and happy thanksgivning, my german mom is on her way to Edmong Oklahoma as we speak...the 3 judys
