Breakfast between Houston and Dallas

I'm planning on driving from Houston to Dallas and back to visit friends - any suggestions on where I can stop between the way for a good breakfast? I'm hoping for something a little more than IHOP (although that is good too in a cinch)

I've never driven quite so far before (still a bit new to driving!), and was thinking of leaving Houston early in the morning and stopping somewhere in between to rest my nerves. This should be an adventure :)

Not sure how early your leaving but a little north of The Woodlands is a Katz's Express deli. It's a minature version Katz's deli on Westheimer. Also further up north of Conroe near Willis is a Cracker Barrel. It's near the outlet mall, I believe the exit is Teas Rd. Further north there's all kinds of truck stops around Huntsville.

In Corsicana, TX (just off I-45 about 60 miles from Dallas) there's a good downtown diner called Roy's Cafe. Good, simple country breakie. Get there early before the biscuits are gone!

Also in downtown Corsicana, there's the historic Collin Street Bakery. They're famous for their fruit cake, but the bakery has a good selection of pastries as well!

True, and the Collin Street Bakery has BIG billboards along 1-45 telling you where to turn off to get to the bakery. Then you can ask the nice bakery ladies there to give you directions to Roy's!
