wow, i can't believe it is all people on TV. how about alain ducasse, or michael bras. joel robuchon, or thomas keller. for those on Tv how about Rokusaburu Michiba, or Masaharu Morimoto. What about Charlie Trotter, Grant Achatz, or Rick Bailess? Um...Alice Waters, Gabrielle Hamilton, Judy Rogers. Eric Ripert, Daniel Bolud.
I'll just just say it: the people with shows are talented cooks but their true skill is in entertainment.

Beg to differ @coolname ... not all TV chefs are more sizzle than steak. You mention Rick Bayless. Then there's the original ... Julia Child ... Mario Batali .... Michel Richard has been spotted behind the camera ... Madeline Kamman ... Jaques Pepin ... to name just a few.
People on TV come to mind mainly because they are more visible.

How about limiting your choices to chef's food you've eaten personally? I'm sure some of you have had the fortune to dine at a number of the big name chef's restaurants, but for me up here in seattle, I 've done tom douglas and ethan stowell and that's about it...nobody on tv that's for sure...

I agree with sailordave. I'm not a chef, but I'm a freakin' awesome cook. So is my mom, my uncle, several of my aunts, my grandma, and my boss--we do either Thanksgiving or Christmas dinner together every year.
One of my very best friends actually is a chef, and she's awesome. A lot of what I know about cooking I learned from her.
And for restaurants in the tiny town I live in, it's pretty slim pickins. We did have a nationally known restaurant called the Imperial Dynasty owned by the Wing family, but when the patriarch of the family passed away, they closed it down. :(

A chef is someone who runs a kitchen, and this definition assumes we're not talking about a home kitchen. I'm classically trained, cook all the time, but right now I am not a chef - I do not run a professional kitchen.
The distinction between "cook" and "chef" has been blurred by using the terms interchangeably.
As far as your question, the best chef is defined not only by the product of his or her labor in the kitchen, but how well the kitchen is run, how well costs are controlled and the line that wraps around the block to get into the restaurant he or she runs.
