What would you put in small phyllo cups?

I often make appetizers and desserts by putting a mix of ingredients into those little store-bought phyllo cups. For example:

a small piece of pear, brie cheese, honey and thyme
s small piece of tomato, smoked mozerella and basil
a raspberry and good quality chocolate
a dollop of ricotta cheese, olive oil and a sliver of mint

i'm trying to think of some autumnal version of this such as:

a piece of butternut squash, sage and brown sugar
small pieces of sauteed mushrooms, butter and thyme

but i'm stuck on one more ingredient for apple, cheddar and???

Also, any other ideas that you may have for what to put in a phyllo cup would be great!

Oh Yes! I second bacon!! I was also thinking caramelized sweet onion. Chicken goes so beautifully with apples and cheddar. What about a bit of chicken pate?

or saute the diced apple with onion and ground walnuts with a little bit of white wine to make spreadable.

it doesn't really go with the cheddar but in the past I baked them with some spinach, ricotta, parm and an egg and served them warm to room temperature and i have done them sweet with homemade orange curd lightened with whip cream

Chipotles minced with adobo and cream cheese.

Shrimp salad
Waldorf salad
Pumpkin cheesecake with some toasted seeds
coconut custard topped with toasted coconut
Mini quiches

Mmmm... I'm getting hungry.

I've served phyllo cups with shrimp salad, as well as crab and even chicken salad. Caramelised mushrooms and/or onions always work beautifully. Bleu cheese mousse (or even just some ricotta blended with, say, gorgonzola) drizzled with honey is another option; and speaking of honey - it would also add a nice touch to that apple-cheddar combo.

I recently made mini dessert phyllo cups with honey-pine nut filling, and they were extremely popular. Coffee mousse sprinkled with shaved chocolate also made a great filling.

And I second mini quiches - so many options there!

apple, cheddar and pecans

I would brush them with melted white chocolate then fill them with pumpkin mousse! The white chocolate keeps the shells from getting mushy.

Apple, cheddar, and chutney.
Apple, cheddar, and bourbon- or juice-soaked raisins.
Apple, cheddar, and toasted walnuts.
Savory pumpkin puree with chopped apple and cheese on top.

Other ideas:
Cream cheese (or creme fraiche, or greek yoghurt) with roe. This is VERY popular when I make it, just pipe into the shells.

chicken salad, egg salad, tuna salad are all very good to use in these cups. For something savory try a trilogy of sauteed mushrooms seasoned with shallots, minced garlic, and salt & pepper.

Apple, cheddar and walnuts.

how about feta cheese, spinach & garlic?

brie, dates, & honey?

small cube of grilled lamb, diced cuke, with a dollop of Fage greek yogurt mixed with garlic and dill...

Brie and apricot jam
chili, melted cheddar and guacomole
cream cheese, locks snd scalion

I would do mini-quiches or a blended filling like mousse, mashed sweet potatoes (with something yummy in them to kick it out of the ordinary category), veggie puree, and then garnish with something strong and pretty, like goat cheese, chives, lemon zest, etc.

Diced sun-dried tomatoes, fresh basil chiffonade, mozzarella and ricotta.

Weird timing. I just served these to friends last night as an appetizer. I used a dollop of homemade spicy fig chutney (made from a bumper purchase a while ago, but any chutney would work), a cover of chèvre, and a sprinkling of crushed pistachios. Into the over for a few minutes to heat through. Mmmmm. Good thing I bought four boxes of those little cups, maybe I'll make some bacon egg and cheese ones for breakfast!

Thai shrimp salad - basically shrimp salad with some canned green curry added. Yum!!!

i caramelize onions (red, white, and chive) and then top them with goat cheese and broil them for a minute. then sprinkle on some thyme, and eat them. yum.
