What do YOU do with apples?

It's that lovely time of year again when apples in my neighborhood actually come from somewhere nearby, and the price drops below $1/pound. It's hard to resist those 5lb sacks.

But when making one more apple pie might push you over the edge, what do you do with your in-season apples of choice?

I make applesauce. If you have the freezer space, your applesauce will taste fresher than canned.
Pennsylvania German people use apples in savory dishes with pork. I like to saute chopped apples and onions together to serve with pork chops or roast pork. Delicious.
My mother would sometimes prepare apples for baking in the evening and then bake them while we were dressing. A good breakfast with oatmeal on a cold weekend day.
Look at ethnic recipes from northen Europe. There are lots of apples used in Norman, German and Swedish cuisines.
Apples are great to snack on with cheddar and other cheeses.

I'm in St Paul and we have locally grown Honeycrisp so I eat a many as I possibly can.

Eat them! Preferably cut into wedges and slathered with peanut butter...

I eat them out of hand, bake pies and tarts, make cheddar and apple frittatas, and make applesauce for canning.

I absolutely love apples, straight up, in a pie, cobbler, or crisp. sliced with peanut butter like cookiepie said! Yummy! I also love peaches another in season fruit in New England where I am. I just stumbled across this fantastic website called how2heroes.com. Its recipe how to videos with the recipes and instructions right there in text form along with the videos. Awesome site. They have a pickled peaches video which looks so easy. Wonder if you could do it with Apples too? Happy eating!

Add a few slices to your grilled cheese sandwiches. (Also good with ham or turkey and mustard in between the bread and cheese...)

I'm with cookie on slathered with peanut butter...

Have you thought of adding them to your turkey gravy? (add some apple cider to deglaze and dice up some pieces in there)

And how about a good ol' fashioned apple butter ?

Out of hand (peeled if possible), slathered with peanut butter, with various cheeses, applesauce, baking - pies, tarts, etc., in salads, in sandwiches, baked, stuffed and baked, shredded in breads and waffles, and there is nothing better than apples with pork and sauerkraut. I also like cooking fruits with other meats like chicken. If I had a plethora (just love that word), I'd eat as many as I could, and peel, slice, blanch and freeze the overload. I've never made it, but I adore a really good apple cider like Ziegler's in my region.

homemade apple sauce! not to mention pork loin with braised apples and burbon, apple cake, apple pancakes, and always, always sauted apples put up in jars.

Maybe it's a Florida thing, but apples are a not a big deal in our house. When I do buy them usually it's for apple cobbler. I poach them in whatever I have available (dark rum, bourbon, Southern Comfort, hard apple cider) slice 'em up and add 'em to the cobbler. Good with pumpkin pie spiced whipped cream. I know that sounds weird, but it's really good.

Waldorf salad! Retro and delicious...

I sometimes replace raisins with seedless grapes

How could I forget apple crisp???

I love a romaine salad with apples and grapes, cheese (feta, blue, cheddar - whatever you've got on hand) and a great dressing.

We like fried apples with a weekend breakfast. Peel and slice, then saute in a skillet with a little butter. When they're still tender-crisp, sprinkle on a little brown sugar and a little cinnamon. Just serve it with whatever you're having - we like it as a side dish with biscuits and gravy and scrambled eggs.

Of course PeanutButter, Waldorf salad!

Mmmm... I like to add shredded sharp cheddar cheese and then some hot sauce, honey and worchestershire to my dressing too :)

Oh yeah -- I forgot, my husband makes this amazing puffy apple pancake -- I think some folks call it a Dutch baby? OMG is it delicious. I had the one they serve at Prune, and I swear my husband's is better...

Also love to make apple sauce (with honey and lots of grated ginger), apple pies, and mini apple crostadas.

Definately apple crisp,and when I've been to the local orchard to buy a bag, I make spiced apples and even freeze extras to heat up to serve as an aside to pork or chicken. I add them to salads, eaten out of hand. Sliced with cheese and crackers.

I've been thinking about making baked apples this fall, haven't made them in ages. I'll have to see if there are any new recipes out there for them, other than the traditional brown sugar, maple syrup, etc..

Lot's more to do with apples than just pies. :)

I like to dip them in caramal.

Every day for the past 2 weeks I've cut up a honeycrisp apple (can actually get little ones this year) and mix it in with my Fage yogurt, honey and walnuts. Awesome lunch!

Apple Towers! Slices of crisp green apples stacked in a tall glass and layered with hot carmel and topped with whipped cream...add chopped nuts, if you're so inclined...a fair fav!

Tarte Tatin!
Get 5 or 6 red pommes unpeeled (much prettier), cored, cut into eigths. Now get one-third cup of sugar and butter each, melted in le Creuset tarte Tatin pan. Add pommes, turn in melted butter/sugar then arrange neatly. Cook gently til as soft as you would like, about 5-10min. Sprinkle on some lemon juice, or Calvados or Brandy or...about 1tbsp. Cool a bit before tucking blanket of rolled puff pastry (store bought)over and around apples, make a few cuts in dough and cook on high shelf in oven preheated to 400 for about 15 min till pastry is nicely browned . Cool 5 min or so, invert on to plate... et voila.....Tarte Tatin! Mmmmm!

I eat them as is (preferably, sliced and accompanied by cheese and/or drizzled with honey or balsamic vinegar reduction), and I make apple sauce, apple butter, apple cake, apple strudel, apple pancakes or apple-sausage "pancake" bake for breakfast ...I also put a grated apple in my coleslaw.

I slice them and eat them. I am an apple purist!

my mom makes the most delicious apple cake. its just a simple one layer spicalicious apple cake but then right out of the oven you poke holes in the top and pour on a melted butter/ brown sugar combo. it seeps into the cake and makes it so moist and buttery and awesome that i might just die of happiness when i eat it. its called apple dapple cake and i found many variations online that look maybe close.

Bake them straight up with a little butter. Milk over top optional.
slice one and put severswl small pats of butter on it and microwave it for 2 minutes, stir and mic again. (I can't believe I just typed that. I don't have a micro anymore and really don't like them....)
Cake, Applebutter, Applesauce...

I chop them up into chopped salads--they give a nice sweet-tart edge. Pears work nicely, too.

Bake sliced apples in a covered dish with red-hot candies and serve them for breakfast.
Apple dumplings.
Scoop out the insides, chop them up, mix with sauerkraut and caraway seeds and stuff back in and bake.
Apple cake.
Sauteed apples & onions.
Apple butter (love my crock pot for that).

Eat as is, bake with butter, cinnamon, brown sugar, and pecans, tarte tatin, freezer can with raisins and cherries as a pie/tart filling...I haven't made Waldorf salad in a while...and we're getting all sorts of apples in here...I think that just made Saturday's menu.

We like to grate equal amounts of apple & carrot, mix with a little lemon juice, raisins if you like, a bit of (skillet)toasted coconut. Delicious combination; very good in lunches. This morning we sauteed a sliced up honey crisp (seemed somewhat de trop til we tasted them) and piled them on top of french toast. In addition, of course, to all of the above--though that now sounds Palinesque, as in: we have an all of the above approach that now, with natural resources such as apples you know, darn right we will.

I like a nice, tart Granny Smith sliced with some brie and a French baguette.

Applesauce!! freshpreserving.com has recipe (12 lbs apples required) for canning. I've done it 3 times; sauce is fantastic, and I think will make great Christmas gifts. The applesauce is great in Applesauce Spice Cake (made twice to raves) from Real Simple (myrecipes.com).

Baked apples are big in my family. A sweet or sweetish apple works without any sugar or honey added; we core, stuff the core with raisins (or other dried fruit, chopped to raisin size if necessary), dust with cinnamon and other pie-like spices, and bake. Put a little water in the dish to get them started, and baste with the apple juices. We don't peel the apples; some people peel the top, or just make a line so the skin splits more evenly. I guess my family is into rustic.

If you want something richer, add some cream, whipped cream, vanilla yoghurt, or ice-cream when serving. The nice thing is that you can eat these any time of day.

You can add a bit of sugar or drizzle of honey if you think the apple needs it, but the right kind of apple needs no additional sweetness when baked.

Red cabbage, apples, wine vinegar, brown sugar, cook until soft, serve with ANYTHING! Always have this as a side dish at Christmas

Spiced apple butter (cinnamon and cloves). Apple jelly. Apple breakfast bread (See King Arthur's website). For once, our little apple trees have produced and I have lots. I am even using honeycrisp (developed here in Door County, Wisconsin) for apple jelly.

I love the retro Waldorf salad and also add them to tuna salad:: Drain tuna in water and combine with mayonnaise, finely chopped, peeled apples and poppyseeds to taste. Use for sandwich filling or serve as tuna salad on a bed of greens of choice.

I live right near an orchard, and I simply cannot resist a $10 bushel of No. 2 grades. My favorites:
Fresh Apple cake (with or without frosting)
Dried Apple Cake
Apple Date Cake
Apple pancakes - make regular batter, add a little cinnamon to it, pour into pancakes on the griddle, then arrange sliced apples into a little design on top. Be sure to have a well-greased griddle when you flip over. Serve with syrup- it's like pancakes and fried apples all in one!

Apple Strudel
I can't believe no one has mentioned Apple Turnovers! - Use layers of phyllo, puff pastry, or my personal favorite, homemade pie crust
Caramel Apples
Apple Fritters
Cream Cheese-Apple Danish
Apple-Sage stuffing in Turkey or Chicken
Canned Apple Pie Filling- Much easier to control sugar content that way
Apple Pie Variations-Crumb Topped Apple Pie
Deep Dish Apple Pie
