Vitello Tonnato Recipe

I'm looking for a vitello tonnato recipe that involves cooking the veal tenderloin sous vide or the less fancy version of maybe even seasoning it then wrapping it in plastic wrap and cooking it in boiling water before chilling. Not sure where i may have seen or heard of this but could use some clarification.
