Uses for leftover matzo meal

I bought a can of matzo meal quite a while back to prepare a honey-nut passover cake. I'd like to use up the rest of the meal but haven't been able to find many recipes online that look appealing. I'd love to hear your suggestions! I'd sort of like to bake with it again, but other creative uses are welcome, too. Thanks!

You can use it as a binder instead of bread crumbs - in meatballs, for instance. Or you can make "Passover profiteroles" - profiteroles made with matzo meal. I like them better with savoury fillings rather than sweet. Or you can make matzo ball soup:-). Also, Sara Moulton has a recipe for a brisket with red wine and "flying disks" (if I'm not mistaken), the flying disks being essentially flat matzo balls cooked with the brisket for some time.

Matza Meal pancakes are always good. Use a regular pancake recipe and substitute part or all of the flour w/MM. Good add-ins are chopped apples (or other fruit), cottage or pot cheese, sour cream. There are many takes.

Try using instead of bread crumbs for a crunchy topping on casseroles or as breading for croquettes etc...

I use it when I make Salmon Croquettes- as a filler and as a breading before pan-frying. Matzo balls are the best use for leftover matzo meal.

i use it to make zucchini latkes. grate and squeeze the zukes, add matzo meal, grated cheese, chopped garlic, salt, pepper, and egg. fry like pancakes and serve with applesauce and sour cream.

Matzoh balls and potato latkes. Gefilte fish too!

Thanks everyone! Zucchini latkes sound great, though I may substitute sweet potatoes... I've never made matzo ball soup, but perhaps now is the time to try!

Matzo makes a fabulous cheesecake "crust"!!!! Try it!
