Tell me what to do with my Beet greens!
I adore beet greens in pasta, but was wondering what else I could do with them. Do you treat them as kale or spinach? Any good ideas?

you can treat them like chard.
I braised some last night with balsamic, a bit of red wine, some sweated onion and garlic, and seasoned it up with salt pepper and harissa. It went nicely under my roasted beets.

MMmmm - saute with a little olive oil, garlic, S&P. Perfect side dish!

I do mine like CookiePie, only with a squeeze of lemon, also. Then I serve my roasted beets (not to be confused with roast beast) on top of them.

I think they are most like chard. I saute some cubes of sweet potato until brown, then add the greens and roasted garlic and cook a bit. So good!
