tapas favorites?

Some friends of mine are hosting a tapas party this weekend, and these things get quite competative, I'm told. They OK'd baba ghanoush as tapas - saving my butt since I've got a killer recipe that I know the hosts love - but I'd like to take something else as well that is a little more finger-foody than a dip.

Suggestions? Recipes?

It is labor intensive but stuffed grape tomatoes are an option. 3 of my faves are sardine and onion, black olive (whatever you like) and feta cheese or bacon, spinach, and mayo (BLT kinda) How about fresh herb stuffed baby bella mushrooms or mini quiches.

if you want spanish tapas, i'd go for gambas al ajillo (garlicky shrimp), setas (sauteed mushrooms), maybe some sherry beef skewers, spiced nuts, tortilla espanola (potato omelet), and manchego cheese. :)

Alex Raij of Tía Pol fame (nyc) does an amazing chocolate & chorizo on slices of toast: a thin layer of melted dark chocolate is topped with a slice of chorizo. It's a strange and addictive combination. Also, you can do a little bite-sized toast w/ manchego cheese & quince paste. Both options are very finger-friendly.

If you're going for Spanish Tapas, try slices of manchego cheese, proscutto or jamon serrano or Spanish Chorizo. All are pretty easy to find and slice up for a platter with toothpicks and some good olives.

This recipe from Cooking Light is my favorite tapas recipe. It's simple, as tapas should be, but the sauce is amazing!

And Sangria mmmmm.
I like the shrimp but grilled with a romesco sauce.
Some sliced thin chimchuri beef tips also grilled
mushrooms sauted
lots of fried cheese
thin sliced ham
olives olives and more olives

An easy thing to bring is a Spanish Tortilla. If you have more time, try making Empanadas. One other dish that is VERY easy to bring... find a really good Spanish Chorizo (cured), pre slice it. At the party over stove top... simmer the chorizo in red wine and a bay leaf for about 10 minutes. Serve with some toasty bread.

One of the BEST Tapas bars is in Cambridge, Massachusetts called Dali. They have this amazing grilled pork sausage served with fig sauce that will absolutely curl your toes.

My favorite tapas dish is baked goat cheese and tomato sauce with crostini to spread it on. Yum!
