Leftover Rotisserie Chicken Ideas...
So, in a moment of weakness I bought a rotisserie chicken at the supermarket yesterday. I ate some of it for dinner with a potato casserole and now I'm wondering what to do with it for dinner tonight. What would you do with a mostly intact leftover rotisserie chicken?

Mix the shredded chicken up with some pasta, spoon over a cream-and-white-wine sauce, topped with a goodly serving of roasted peppers, onions and sweet corn, and maybe some shredded Parm. Oh, and a side of some warm bread and an olive oil dipping sauce.

Fried rice, stir-fry, a curry, enchiladas, frittata, soup, shredded BBQ chicken sandwiches...

Works really great for any kind of chicken soup, and is good for chicken and rice, tacos/burritos/enchiladas, chicken salads, chicken pot pie, etc.

Hmm...chicken pot pie using a phyllo dough crust (my favorite); as a pizza topping along with mushrooms, fresh basil, asparagus, tomatoes, or whatever you like on your pizzas; or a "stroganoff" using chicken instead of beef (not sure what that's officially called).

Enchiladas, tacos, burritos, chicken salad, pulled bbq chicken sandwiches, cheesy chicken casseroles, Chicken Cesear Salad (or other salads with chicken added), wraps, pitas...That's all I can think of right now. HaHa
I asked this same question not too long ago and got some great ideas!

I always use rotisserie chicken to make chicken salad. Mix with chopped grapes, celery, walnuts, a little mayo (I usuallly use the lite kind) and salt and pepper. Have delicious sandwiches all week long!

Hey for a cheap treat for dinner
Try cutting up he rest of the bird and 2 packages of Ramen Chicken flavor
add some veggies and you have a nice meal for two!

OH I never thought of tortillas or burritos!! yum!
I usually make a pasta salad with big chunks of cheddar cheese (or firm blue cheese if you like), fresh parsley, fresh chives, celery, pickles, those shell noodles and lots of ranch dressing!
