"If allowed only ONE topping on a cheese pizza, it'd be _____."
Just finished munching on a slice of cold leftover pizza for my too-lazy-to-cook weird Sunday morning brunch, and this query-a-la-JEP popped into my head...
No cheating! You can only choose ONE topping! But, if you want to trade the cheese or sauce for another topping, go for it!
Happy Sunday!

Spinach. I'm sticking with the rules (and spirit) of the query and not making any other exceptions :D.
therealchiffonade at 2:05PM on 10/19/08
I am good with the cheese.
izatryt at 2:17PM on 10/19/08
pepperoni
dearrie at 2:31PM on 10/19/08
Artichokes
greenkitchen at 2:33PM on 10/19/08
Well, my favourite pizza is simple pizza bianca, with truffle oil and mozzarella (lately though, I use a mix of mozzarella, pecorino and asiago). So basically, truffle (or even plain extra virgin) oil and cheese(s) are all I ever need for my dream pizza...
brooke29 at 2:45PM on 10/19/08
fresh chopped basil....
Pavlov at 2:57PM on 10/19/08
Fresh sliced tomatoes
beth1 at 2:59PM on 10/19/08
Crumbled, hot Italian sausage.
czken at 3:02PM on 10/19/08
I'd never swap the sauce and cheese - it wouldn't be pizza! Only one is so hard. Ok, ummmmmmmm...............musheroniartiplantsauspeps.
I had pizza yesterday (with sausage) and it was fantabulous. I reheated a slice later (in a non-stick pan with an off the edge lid. Something happens to change the flavor of the cheese. I threw it out. Any ideas pizza lovers?
Shout out to JEP if you're "listening"! Nice post LoCo.
PerkyMac at 3:02PM on 10/19/08
Errr ... my one topping? Another pizza with everything on it, flipped upside down so there's a top crust ... :-D
Ok, keeping with the rules? Sausage, nost definitely. Anything from a mild breakfast sausage to @czken's hot Italian sausage, depending on my mood.
LunaPierCook at 3:16PM on 10/19/08
to choose just one.... fresh mushrooms.
Alm25 at 3:19PM on 10/19/08
I'm seconding fresh basil! Yum!!
ChristineB at 3:19PM on 10/19/08
@ChristindB & Pavlov ~ I didn't make the rules, but I'd consider basil to be a garnish, not a topping. I put it on after the pizza comes out of the oven (and add some to the sauce). Definitive answer awaited from LoCo. ;)
PerkyMac at 3:55PM on 10/19/08
MMMmm...mushrooms! When I saw the ____ in this talk post...wow :) Thanks for the ongoing kind words...I'm trying to absorb lots of extra TLC these days.
JEP at 3:55PM on 10/19/08
julienned salami, on top of the cheese, baked until the edges of the salami get all crispy.
sigh.
ChelleyD01 at 4:03PM on 10/19/08
And you have lots of love here JEP! So many of us are having hard times right now. That includes huneybumper, Josdean, and me, among so many others. I'm glad we can give each other a little boost and not care if we're blue, orange, rich, broke, tall, short, fat or skinny. The heart shows through and I love you all and wish you the best. So happy to see your name!!!!
(shrooms are my favorite, too!)
PerkyMac at 4:16PM on 10/19/08
Fresh basil.
pecorino at 4:25PM on 10/19/08
hmmm....topping..... something that goes on top of a pizza... I'd say Basil would most definitely qualify as a topping if it were chopped and put on top of a pizza. It could also most definitely qualify as a garnish since it would enhance the flavor of the said pizza, then again I guess the same could be said of any of the aforementioned toppings.
Pavlov at 4:26PM on 10/19/08
I said fresh basil earlier, but I have to admit that when I was in high school, I convinced myself that I didn't like melted cheese (dont judge me--I was crazy then!) and would order a cheeseless pizza with spinach and mushrooms (but only from Vace's in DC). It's actually pretty good like that, but I've now learned the error of my ways and get it with plenty of delicious cheese! So if I'm getting it from Vace's, I'll go with mushrooms; but otherwise, I'm sticking with basil.
ChristineB at 5:15PM on 10/19/08
Another vote for salami here, julienned or otherwise chopped finely.
(when multiple topping are an option, though, I prefer veg)
renzata at 5:29PM on 10/19/08
more cheese... why add anything else???
MadelynRodriguez at 6:19PM on 10/19/08
Pineapple
buffy at 7:05PM on 10/19/08
@buffy ~ Pineapple! So tempting. I don't know......I can't make the change from cheese just yet.
izatryt at 7:12PM on 10/19/08
Sliced kalamata olives...yum!
jmfors at 7:37PM on 10/19/08
I'll second basil if it's the only thing I get.
wellred at 7:58PM on 10/19/08
mushrooms here too!
floridagirl at 9:18PM on 10/19/08
Jmfors: Seconded! Although I prefer whole kalamata olives, pitted and sprinkled generously over my whole pie.
nightowl at 9:35PM on 10/19/08
tony bourdain?
jazzinx at 10:06PM on 10/19/08
shrooms. UNDER the cheese.
dbcurrie at 12:18AM on 10/20/08
Poop. Do I have to have cheese? :(
It would have to be ...tough choice between whole basil leaves or mushrooms - I guess mushrooms. When I get the pizza, I'd rip off the cheese.
Cassaendra at 7:27AM on 10/20/08
piles of arugula!
veggieout at 7:39AM on 10/20/08
mushrooms! unless its from the pizza lady in stonington ct. then its her "soupy pizza" soupresatta homemade and soooooooooo good!
huneybumper at 7:57AM on 10/20/08
EGGPLANT
embolini9 at 9:31AM on 10/20/08
fresh basil. But it depends on my mood!
Laurel E at 10:22AM on 10/20/08
So nice to see you, JEP! And I'm with you on the mushrooms. Wishing you well!
CookiePie at 10:28AM on 10/20/08
There's something about pepperoni that when when baked into the pie and cheese, it brings out the flavor and enhances it more!
sassy at 10:33AM on 10/20/08
whats up with you guys? you know Green Chile is the best. Green Chile and cheese. winner!
seikel at 10:49AM on 10/20/08
just one? I'm with beth1 on the fresh tomatoes then. :)
hungrychristel at 10:56AM on 10/20/08
Broccoli. I'm a freak.
emes1 at 11:04AM on 10/20/08
Does beer count as a topping? If not, I'll take it plain (the pizza).
sloppy at 11:19AM on 10/20/08
@JEP... nice to see you popping in here... hope all is well with you!
@jazzinx... bwahahahaha!
@cass... yes, you can exchange cheese for something else (see original post)
Me, I'm a pizza purist. I like a plain old super thin, crisp-crusted cheese pizza, provided the dough is perfect and the sauce awesome. Margherita is another fave. And a hint of olive oil, artichoke hearts and feta is another.
If my pizza does have other toppings, it's never more than one item. I don't like stuff that will compete with the sauce, crust and cheese! Usually I'll go for mushrooms, but sometimes peppers or fresh tomatoes are good. If I'm in the mood for a meat topping, it's almost always sliced or chopped meatballs (as long as they are truly excellent ones) .
LoCo at 11:42AM on 10/20/08
eggplant.
Amandarama at 12:29PM on 10/20/08
LOL cassaendra--at first glance thought "poop" was your topping of choice. Whoops!
@jazzinx--tempting, but I think I'd go with Curtis Stone. The aussie accent puts it over the top.
buffy at 12:48PM on 10/20/08
Swap the pizza sauce for pesto, and I don't need anything else.
cyberroo at 1:54PM on 10/20/08
anchovies...salty awesomeness...all i need
gastronomeg at 2:24PM on 10/20/08
This is so wrong. It's a tossup - arugula...or bacon.
I vote for bacon.
lorelei76 at 3:28PM on 10/20/08
No contest - arugula.
GregWA at 3:34PM on 10/20/08
@ GregWA .... nice add!
Pavlov at 4:55PM on 10/20/08
Nice, thick slices of super colossal canned black olives. I know, I know, canned olives are a travesty, but they have a weird hold on me.
Josdean at 6:34PM on 10/20/08
I like canned black olives, but I really adore the briny saltiness of kalamata olives.
nightowl at 6:39PM on 10/20/08
My first thought was Mushrooms- but I have to admit that canned black olives is a close second.
When we were kids we'd argue about what to have on the pizza, and it nearly always ended up being either mushroom, olive and pepperoni or mushroom, olive and sausage.
cmtigger at 9:55PM on 10/20/08
Green olives or feta.
smile at 10:42PM on 10/20/08
garlic.
juliebugsmama at 10:52AM on 10/21/08
When I was little, I used to take the large canned black olives and stick them on my fingers.
izatryt at 11:04AM on 10/21/08
Ah....one topping hmmm...I guess it would be pineapple or mushroom. Pineapple is way more exciting but we usually get it with something else too like black olives. Mushroom can stand on its own.
Hillary
Chew On That
Chew on That at 3:13PM on 10/21/08
Haha I did that too, iz!
Hillary, I don't really like pineapple on my pizza unless it's counteracted by something salty. Usually that's meat. I wonder how it'd work with feta though.
nightowl at 3:25PM on 10/21/08
Ranch dressing...no not really.
bobbob at 4:27PM on 10/21/08
Arugula!
justhungry at 4:30PM on 10/21/08
Garlic ! and I still sometimes do the olives on the fingers thing when no one is looking!!
deefine at 4:41PM on 10/21/08
Jalapenos or banana peppers. No, nobody I split a pizza with ever lets me order them, but once in awhile I get my own half...
producestories at 4:58PM on 10/21/08
I second the motion: anchovies.
BKNY64 at 7:06AM on 10/22/08
Like nightowl and izatryt, sliced canned black olives.
minonda at 7:29AM on 10/22/08
This thread got my pizza motor running yesterday. I decided I needed a slice for lunch. So I boogied on over to my favorite local place, Tony A's, and stood in front of the the pizza counter and tried REALLY hard to select one with ONLY 1 topping. Couldn't do it. I stood there for such a long time, the guy behind the counter didn't think I would ever pick-a-piece-a-pizza. I ended up with my usual, Florentine. Topped with mushrooms, spinach and tomatoes. Into the pizza oven it went and came out extra crispy and hot! I topped that glorious piece-a-pizza with crushed red pepper, a bit of garlic salt and Shazam! I was a happy, happy camper.
But ~ There was one thing about my pizza................
izatryt at 9:00AM on 10/22/08
I am a traditionalist - pepperoni.
BITTER at 11:30AM on 10/22/08
@cassaendra--first glance I thought "poop" was your topping of choice too...I'm glad that's clarified
...Now that I've read some other toppings--I might swap-out tomatoes for anchovies [probably if i'm 'in the mood'; haven't had that in a while!]
hungrychristel at 11:47AM on 10/22/08
I have discovered the perfect pizza, by the way. Kalamata olives, sun dried tomatoes, artichoke hearts, and mushrooms. YUM!
nightowl at 4:57PM on 10/22/08
I'm a big fan of jalapenos and pineapple together. Spicy + sweet = goodness. But that's over the one topping limit.
Ummm.... where the heck is FastFoodCritic? Anyone? Hello...
buffy at 1:06AM on 10/23/08
im boring pepperoni
pjracz10 at 11:19AM on 10/27/08
mushrooms!
caramel at 11:23AM on 10/27/08
can i request fresh mozzarella cheese?
then i think i will take some feta cheese at my topping along with it. mmm feta.
plyeng at 1:49AM on 10/28/08
Hmm... if I have to choose just one, I would have to say mushrooms.
I would also swap the cheese for some spinach, or perhaps pineapple...
Steen at 12:45AM on 10/30/08
Mushrooms. Thick sliced, and placed raw on the pizza before baking, so they're all nice and chewy.
jenilowrance at 12:50AM on 10/30/08
