I am Obsessed with......

1. Mastering the perfect omlet.

2. Holding my poached eggs together.

3. Learning how to correctly cut-up a fryer chicken.

And you???

32 Comments:

1. Figuring out how to control things in my oven to get (approximately) the bread crust I want.

2. Trying to replicate my great-aunt's peanut brittle (it only took me 10 years for my grandmother's biscuits...).

3. Figuring out how to eat like my doctor wants me to without using processed foods, spending more than my budget, or sacrificing my enjoyment of my food.

4. Learning how to make Indian, Chinese, and Japanese favorites at home.

1- Finding the best Yu Xiang eggplant recipe.

2- Making the perfect barbecue sauce.

3- Eating everything as a taco.

4- Japanese adult video.

@SqueezeBottle: Bukaki?!

1. Making perfect biscuits.
2. Being able to make decent Asian food.
3. My Thanksgiving menu.
4. What four meals to cook for my boyfriend the next time we get a sizable chunk of time together.
5. Making wonderful, from-scratch meals on a ridiculously small budget.
6. Chocolate making.
7. Making "fall themed" desserts, i.e. pumpkin brownies, an "autumn cheesecake," spice cookies, etc., etc.

1) Learning to make awesome vegetarian Indian food
2) Cooking outside of my comfort zone (I'm going to try experimenting with home-cooked Thai next week)
3) Finding pumpkin puree in London (I bet the Whole Foods in South Kensington has some)
4) Eating all of my frozen leftovers before I make anything else!
5) Everything is better with more cheese

1) Making decent southern-style biscuits.

2) Learning to cook things more slowly so they're juicier and more tender.

3) Figuring out what makes "classic" Michigan food.

4) Making eggs and omelets that are perfect every time.

1) Learning how to scramble eggs properly
2) Figuring out how to make buckwheat pancakes like the Original Pancake House
3) Cake decorating (I curse the Wilton Rose)
4) Thanksgiving, Christmas, New Year's Eve, Mardi Gras and Easter Menus
5) Not destroying cast iron (thank God for pre-seasoned)
6) Egg custard pie
7) Coconut cake
8) High-quality cookware and kitchen tools
9) KitchenAid Stand Mixer and Food Processor Accessories
10) Cookbooks

Thankfully, biscuits are not on the list. After 15 years of failure and anguish, I finally got 'em right: http://nujoikitchendiary.blogspot.com/2008/10/redemption.html

I dont have a link to it but Tyler Florence has a simple and good recipe for tasty, light biscuts.

1. Every holiday menu. I always start planning & pondering at least 2 months in advance.

2. Picking, preserving, pickling, jamming and freezing fresh produce (the season is almost over...)

3. Finding a good recipe for Portuguese egg tarts and finally making my own.

4. Finding a proper duck for and learning to cook real Peking duck.

French fries.....

Right now, I'm obsessed with . . .

1. The perfect cup of coffee, which is why I only use a french press.
2. Dips and Spreads. I love trying new recipes and testing them out on friends and family. The BLT dip I made last week was soooo good!
3. Getting my Thanksgiving and Christmas menus planned.

1. Avoiding foods with vegetable oil (soybean oil, corn oil)in them, as they make me sick, therefore I am trying to eat bacon grease, butter, cream, olive oil and coconut oil in as many recipes as I can where fat is called for. This is forcing me to try new recipes for homemade salad dressings.

2. Making a good baked apple pancake, like the one in my dreams at my favo pancake restaurant. I have yet to master this.

3. Lard -- finding pig fat to make good lard.

4. Used to be obsessed with finding the perfect recipe for Yu Xiang Pork, but I have given up. It is restaurant-only fare, which peeves me, as I think it probably has cheap-o vegetable oil in it.

5. Getting plain ole yellow cake right.

Perfect pie crust -- but with all butter.

Currently:

1. Making my own loose tea blends

2. Becoming a more versatile bread baker

3. Striking a balance between eating the treats I want and having a healthy lifestyle

1. Growing a blog I am overwhelmingly passionate about.....

http://gonzogastro.wordpress.com

1) New York/New Jersey Italian Deli/specialty shop foods

2) perfecting my slow cooked baby back ribs (I think I've finally done it)

3) making sure my two beautiful babies eat healthy

4) trying to feed four people in this economy on a very small, ridiculously tight budget, while still eating fresh, delish food that doesn't all have ground beef in it!

5) figs

6) seafood (again, how do I successfully keep this on my family's table during these tight economic times???)

7) finding a decent loaf of crusty Italian bread down here in Atlanta. Is this even possible? I'm thinking not.

8) finding a decent pizza down here in Atlanta.

9) finding decent chinese food down here in Atlanta. (seeing a pattern here?)

@Rosebud: I used a recipe for an Apple Cider Vinaigrette from Epicurious that ingredients include cider, cider vinegar, honey and a cinnamon stick...it's delicious!

That being said, I'll answer the question now:

1) Not over-spending on food
2) Brioche
3) My Thanksgiving contributions to the family dinner
4) The Perfect birthday cake for my mom in November

1. Spicy Chinese Mustard.

2. Wintry dishes - stews, chili, risotto

3. Wee Brie!

4. Lindeman's Framboise Lambic

5. Couscous, in a thousand different ways.

Seeking out the best... Ice Cream brand (so far, LaSalle, Sadutto); pure maple syrup (grade B); Vanilla (Neilson Massey); making my own special blends of ground coffee (Starbucks combo House Blend, Colombia, French; and Fairway Sumatra)
Also, never using commercial brands of salad dressing (I always make my own); and, I consider anyone who stores tomatos in the refrigerator to be a bad person! So there.

1. Tasting steaks from different ranches
2. Cooking outside my comfort zone as per @ChristineB
3. Food blogs, to help with #2 (plus, so many are truly entertaining!)

@caramel Try it with 100% Kona coffee! It's the best!
*giggle*

- Cream Cheese: Camembert, Brie, Philly

@SqueezeBottle: What kind of japanese adult videos? Does this involve food by any chance? Some 'Saki'? LOL

@ lo8270 4. Lindeman's Framboise Lambic

I haven't heard of this variety? I assume it's a red--do you go through phases of wine obsessions? Or is this an ultimate obsession? I'm looking to stock my wine cabinet shortly and need some new flavaas

@hungrychrstel - it's a beer. a delicious raspberry beer...

http://www.flickr.com/photos/pete4ducks/434142638/

@lo82070 ~ Isn't that the absolute dream beer!

That's the first beer I ever finished! It's SOO good. Now, if only I could find it for less than $7 a bottle.

1) Getting good deals on food. Not necessarily cheap, but not paying more than I need to. I'm positively gleeful when I find a sale on a cut of meat or when I wrangle a good deal at the farmer's market. I swear, sometmes we eat cheaper than prisoners. Then I splurge on another meal, which I guess is my overall plan.

2) Finding the best tools for all the jobs in the kitchen. For example, I don't need five things for shredding cheese, I only need the one that works the best. Or one for when I'm just shredding a little cheese and one when I need a massive quantity. Those can be two different tools, but I don't need three or four or five things that have the same function..Same for everything else in the kitchen. I've gotten rid of a lot of cruddy pots and pans and gadgets and things I never use, and slowly I'm building up an arsenal of the absolutely perfect things.

3) Organizing my kitchen so that it's the most efficient.

4) Not overbuying. I need to use up some of the stuff that I've got in the pantry, and I need to learn that I don't HAVE to buy four bottles of wine vinegar when it's on sale. It's not like the world will run out.

5) Trying to get my MIL to understand my food point of view. Not to change her; she's never going to change. But to get her to stop trying to change me. She's always saying, "You don't have to do it that way." and I know that I don't have to, but I want to. This is how I like to cook. Deal with it.

6) I would dearly love to help my MIL cook better things. It's not going to happen, but it would be nice. The funny thing is that cooking was about the only thing my own mother and I saw eye-to-eye on, and it's the one thing where my MIL and I are furthest apart.

7) World peace (cookies)

The recipe for Bruenner's Bagel chicken salad recipe.
Learning the art to smoking foods.
Organization in the kitchen (I have a small one).
Learning how to prepare Indian foods, the spices ect..

Making the perfect divinity candy.

2) Creating new quiche fillings as that has become a small hobby
