How do YOU quiche?

Whether it's what you put in your homemade quiche, what your bff puts in his/hers, or that restaurant or grocery you go to simply for the quiche...what do you like? Fillings? Crust? Topping? On the side?

My default homemade quiche has onions, garlic, spinach, and mozz/cheddar cheese. Some new inspiration would be nice, however exotic or not.

My favorites are caramelized onions or sauteed mushrooms (until they're quite crispy and brown), along with either gruyere or goat cheese (although I've used cheddar as well, with great success). My favorite quiche crust has got to be the crust that Ina Garten uses for her goat cheese tart. It's very, very easy to make, and is incredibly flaky! On the side? A simple salad of mesclun and grape tomatoes is perfect for me!

I was visiting family last month and my Aunt served a quiche with fresh tomatoes and basil. I am not 100% sure of the cheese at this point. I was totally in love with the tomato and basil.

My favorite combo for quiche (and stromboli and appetizers and with pasta and however else I come up with to use it) is spinach, mushrooms, bacon and gruyere cheese.

my favs are grilled asparagus, italian sausage, and fontina...or bacon, scallions, gruyere and chedder.

Mine are usually dairy free due to OH's lactose intolerance. Some of our favourites are:

*caramelised onions (variations include it being topped with fresh tomatoes and basil)
*onions, sausage & peppers
*sausage & spinach
*broccoli, corn & red peppers (this one looks very lovely)

They usually all have garlic and fresh herbs in them, some get treated with smoked paprika or whatever else I feel like at the moment.

In my other (i.e., unmarried) life, I loved broccoli & aged cheddar and mushrooms & gruyere. Oh well. Sometimes when I make mini quiches for parties, I make half with cheese, half without.

All of the combo listed sound wonderful!!

My favorites are carmelized onion, bacon and swiss. I make many other varieties, usually containing more veggies, but if I had to pick a favorite combination, that would be it.

My favorites are:

Spinach & artichoke hearts with cheddar and monterey jack
Smoked salmon & blanched asparagus with gruyere and jack

I just made two last week they were so good just set not quite cooled yet the traditional bacon & swiss ans feta & bacon Yummy

My quiche choices depend entirely on what I have on hand: Made one this past week with caramelized onions and garlic plus wilted spinach, and some herbed Boursin cheese. The one before that had cooked, diced chicken in it as well as mushrooms and a four cheese blend with parmesan, asiago, another cheese I can never remember and mozzarella.. Yum, in any case. :)

I like zucchini, onions, cheddar, & sausage. Yum.

My favorite part of the quiche is always the filling, so I usually bypass making a crust and just make a frittata! My favorites are spinach and feta, smoked salmon with asparagus and goat cheese, and zucchini and tomato.

I like my quiche simple (much like my pizza) in order to fully appreciate the subtlety of all the flavors. My favorites are spinach or asparagus or duxelles. Zucchini or yellow crookneck also work great. Ham or back bacon can be okay, but mostly I prefer just vegs in my quiche.

I'm not at all fussy about the cheese. Gruyere or emmenthal are no-brainers, but I really can't think of too many cheeses that won't work in a quiche. As long as it's good cheese and it's there, I'm happy.

I like spinach or broccoli and cheese, or sometimes even leek and cheddar quiches.

my favourite's pretty standard - sautéed bacon and ham! Sometimes with some onions that have been sweated down, but not caramelised.

A great sorta-vegetarian one I made for my mushroom loving friends was caramelised red onions (with some balsamic), wilted spinach, and mushrooms sautéed in butter, olive oil and a touch of garlic.
