Favorite Noodle Soup Toppings?

My friend and I have built a noodle soup idea generator called Noodlr. I may have reached ingredient block and, in the interest of strengthening the database, would LOVE to hear people's favorite ways of dressing up instant ramen or from-scratch noodle soups. Think meats, dumplings, pickles, relishes...

- mussels
- kamaboko
- gobo-ten (similar to kamaboko)

Holy crap Cassaendra. haha I'm not sure I have anything to add to that..

- fried garlic w/garlic oil (BTW, it's so easy to make: throw 2-3 peeled heads - yes, HEADS - of garlic into a food processor and chop up into smaller pieces. Cook on low heat in a pan with a whole lot of olive oil. In about 20-30 mins, you have crunchy garlicky bits in a fragrant oil. I usually have a container of this stuff sitting in my fridge to put on EVERYTHING.)
- Sriracha
- Raw egg. Mnnnnn.
- Baby spinach
- Shredded carrots
- Green Onions
- Paper thin slices of sweet onions
- Cilantro
- Squeeze of lime. Or lemon, I guess
- Meats. All sorts of meats

Thanks, this is all extremely helpful. There's some overlap with my existing database, obviously, but I'm adding tons of stuff: chopped fresh chilis, Japanese curry base, tempura, baby spinach.

I put a dash of rice wine vinegar, a dash of worcestershire sauce, and drop an egg into my Ramen.

I also like Pandang Peanut Sauce.

I had pneumonia during corn season, so I heated a boatload of chicken stock, cooked chicken pieces in it (then cooled them and shredded the meat), corn on the cob (removed, cut off kernels and added back in). I cooked egg noodles separately so I could add just what I wanted in each bowl of soup, and they were never overcooked. I have loads of chives and parsley growing and sprinkled them over top. Would have added scallions if I had any. Served with saltines, I swear it helped me heal.

If I'd had more energy, I would have added more vegetables, like carrots, peas, celery - nothing exotic. Chicken and dumplings is one of my favorite comfort meals, but I never put noodles in that. Mine is more like a stew. Two starches? I don't think I ever do that. PA Dutch put very wide noodles in chicken pot pie, but no pie crust.

I love wonton egg drop soup, but all of my suggestions are pretty ordinary. I'm truly inspired by the suggestions above. You people are so innovative!

It's popular here in Korea to put a slice of processed cheese on ramen. I'm not a huge fan lots of people love it.
