Cake Combination Question
I am taking a cake decorating class and my homework is to make a cake and icing. My dad would like a yellow cake and walnut cream icing. I was thinking of adding maple flavoring to the icing, but I wanted to get some advice regarding yellow cake and the icing - would that go together? Maybe a white cake would be better? Also, for the maple flavoring: would syrup be good or should I stick to using an extract?

I once saw a recipe for 7-minute type icing using maple syrup instead of corn syrup. If you do use maple syrup, try to get Grade B, it has a more "mapelie" flavor. I would prefer the yellow cake and might make it a maple walnut icing. Good luck.

I would almost recommend using just an extract, because the flavor of the icing using syrup, I have found, doesn't always turn out quite the way that you think and can be rather overpowering. However, I do think that a yellow cake with walnut-maple icing would be very nice indeed. Can I have a slice?

The cake-icing combo sounds delish! I'm sure extract would give you more intense flavor, but I would look for a pure one -- the imitation extracts always taste terrible to me.

I think either a pumpkin or white cake might go better with those frosting choices.The yellow cake might be too sweet, and while pumpkin might be sweet too, it provides a great fall complement to walnuts and maple flavoring.

If you're uncertain, you could make one layer of the cake yellow, the other white, since the frosting would 'cover' it.

The yellow cake can be convered to carrot, or spice or pumpkin which all go well with maple. But if he demands yellow and maple well I would go with using real genuine maple syrup. Now for my disclaimer.
Maple Syrup is expensive so try and get your recipe right because tossing it out is not an option. Well unless you have to. Enhance one little bit at a time till you get your goal flavor.

i would go with the spice cake and extract rather than syrup. maybe a cream cheese maple icing, you dont want anything too sweet.
