Breakfast Ideas

I love a chai latte and a muffin before work in the morning, but I can't afford to buy them from Starbucks everyday! Anyone have suggestions for chai lattes I can make at home (either a premade drink or heating up chai tea with milk and spices)? Or good muffin/scone recipes? I usually like rasberry or other berry muffins but I'm open to anything! And lower in fat, high in fiber, healthier, etc is always good! Any other good breakfast suggestions that give you that boost before work are appreciated too!

I have found that Celestial Seasonings makes a really decent chai tea in the bag, and I just steep that in hot water and then add cream, instead of milk. It makes a really nice chai tea...with very little extra effort. (I'm a mom trying to get two kids out the door by 7:00 am and me off to work...who has time to mess around with fussy drinks?)

Not exactly the most healthy thing out there, but they freeze well and can be stored away for the mornings that you're in the mood for something a little more caloric.

Trader Joes makes yummy lowfat muffins sold in packs of six they are high fiber and high protein. My favorite flavors are banana chocolate chunk and raisin bran.

Make your own chai on the cheap: steep strong black tea with cinnamon, cardamom, and cloves in a small saucepan. Once you take the teabag out, add milk/half&half/cream/etc and heat over low for a few minutes to infuse the spices.

For muffins, I love Vitamuffins - you can buy them online, they'll send them to you and you freeze them, then microwave as you want one (or just let it thaw). They're delicious, and full of vitamins and fiber, and no crappy ingredients.

I'm pregnant, so I have to eat the second I wake up (or else there's a risk of violence), so I have a Vitamuffin top and a glass of milk first thing, and it gets me going! The muffin tops are only 100 calories and have 6g fiber -- they have regular-size muffins too.

Republic of Tea has a chai concentrate 12 oz.= 3 quarts. Also available in decaf. www.republicoftea.com

Most scones are not consider "healthy" but this recipe for Banana-chocolate chip scones is surprisingly lowfat and high fiber. It is made with oatmeal and buttermilk. The dough is somewhat wetter than normal scone dough but if you handle it gently it works. You can even prepare the scones the night before and then freeze. Bake as needed.

Oregon Chai for sure! It's a mix, you just add an equal measure of milk.

As for muffins, I recommend Trader Joe's, but be careful...TJ's doesn't add preservatives to their breads so they go green quickly.

Banana Bread Muffins

These simple muffins are a great breakfast treat or an easy snack. Make sure your bananas are super-ripe: the blacker the better!

Ingredients

3 or 4 ripe bananas
1/3 C. melted butter
1 C. sugar
Raisins and/or nuts (optional)
1 egg beaten
1 tsp. vanilla
1 tsp. cinnamon
1 tsp. baking soda
Pinch of salt
1 1/2 C. flour

Directions

In a large bowl, smash bananas. Mix all the ingredients in, adding the flour last. Mix together with a fork. Pour mixture into a greased 4x8 loaf pan (muffin pan will do as well). Cook at 350 degrees for 45 minutes or until desired color.

I'm such a nut when it comes to breakfast. During the week, I'm strictly a Honey Nut Cheerio girl. On the weekends, it's all about sweets. I love dessert for breakfast. This morning it's gooey brownies with walnuts. Yum! Perfect with coffee.

I usually don't eat breakfast (mine is 2 cups of coffee) but if I do, it's usually a piece of fruit or a boiled egg. I just can't stomach any food right after I wake up. I looove biscuits n gravy though, so if I'm visiting someone and they've made them, I'll scarf them down while I'm still half asleep!

You could definitely add a little cardamom, cinnamon, and nutmeg to make them taste like chai.

I just recently discovered chai latte concentrate in the tea section at Whole Foods. They carry several different brands, incl some low-sugar options if you're into that sort of thing. I ended up going with the 365 Organic red chai blend, which is pretty good. So easy to put everything in a travel mug and fill it up with crushed ice when I get to work! I think the box of concentrate cost like $2.99, which was fantastic.

Both the Oregon Chai concentrate and the Tazo Chai concentrate are very good. Must cheaper then stopping by Starbucks and just as good.

I'm not really a breakfast person myself though. Just coffee and I'm good. I can't stomach any real food until I've been awake for a few hours and even then I'm not usually in the mood for sweet stuff.
