Baked Oatmeal
There is a breakfast/lunch place on Long Island called Maureen's kitchen that makes the most amazing baked oatmeal I have ever tasted. It contains raisens, dried cranberries, walnuts, apple slices and orange zest. It is served with steamed milk on the side. It is a drier consistency than oatmeal and appears to have been baked in a sheet pan. It tastes amazing and I have never had anything similar. I would love to replicate this at home. Does anyone have a recipe? Calling this oatmeal does not do it justice, it is so much more.

This recipe is a little different from the baked oatmeal you had, but I think it's pretty yummy.
Baked Oatmeal
Ingredients:
1 ½ cups skim milk
2 eggs, beaten
2 tsp butter, melted and cooled
1 tsp vanilla
1 tsp cinnamon
2 ½ cups rolled oats
2 tsp baking powder
1 cup sliced bananas (optional)
Directions:
Preheat oven to 350. Spray a 9x13 pan with nonstick spray. Whisk together milk, eggs, butter & vanilla in a medium bowl. In a large bowl, stir together cinnamon, rolled oats, brown sugar & baking powder. Fold milk mixture into oat mixture. Let stand for 15 minutes. Pour into prepared pan. Bake 35 to 45 minutes. Top with sliced bananas.
I like to serve it with vanilla yogurt. Hope you enjoy!

Momma Bear Porridge
3 cups water
1 2/3 cup old-fashion rolled oats
3/4 cup (real) maple syrup
1/4 cup brown sugar
1/4 cup chopped walnuts (optional)
2 eggs, beaten
1/2 teaspoon ginger
1/4 teaspoon nutneg
Preheat oven to 350º. Bring water to boil in heavy sauce pan, reduce heat and add oats, cook 5 minutes, stirring frequently. Take off heat and add everything else and stir until well combined. Pour into loaf pan and bake about an hour until set.
You can do this the night before and just nuke a serving. You can also freeze individual servings.
Serve with milk, cream or a scoop of vanilla ice cream!

Add some raisins, apples, walnuts and orange zest to this one and see if it's close to what you're looking for. It sure looks good!

@rvagal--that looks yummy! I used to make baked oatmeal a lot when I was still living with mom and dad, and haven't had it since. This brings back some good memories. The recipe I used didn't have eggs in it though. I'd like to try yours. I put chopped dates in mine and sometimes used a mixture of rolled oats and rolled barley for a little change in texture.

I made this with fake eggs and yogurt and banana. It is very good and I freeze it in squares and put a frozen quare in Mr Tomato's lunch bag.

It might be steel cut oatmeal. It tends to be much thicker! You might want to ask what kind of oats they use next time you are there.
