Apple quick bread
I never thought I'd say it, but I'm getting tired of apple pies and crisps. I'm not a great baker, so I was hoping for advice from Serious Eaters as I still have an insane amount of apples to use up. Does anyone have an easy recipe for an apple quick bread or cake?

Okay, this is going to probably offend all of my fellow foodies out there who don't "believe" in using boxed cake mixes...BUT, I have found this to be such a wonderful recipe and the addition of the boxed cake mix makes it VERY quick and easy and I can throw it together in no time....
First, peel and cut a mess of apples ("a mess"...meaning, ah, maybe 4 or 5 big ones? 6 or 7 little ones?) and put them in a sauce pot with some sugar, a splash of water, a dash of salt and cinnamon...basically to make a quick applesauce. Keep it chunky. Once that's cooked down just a bit, and the apples are tender and sweet, add that homemade applesauce to a box of Duncan Hines Spice Cake mix. Make it according to the recipe on the side of the box ("Applesauce Cake" I think it's called)....I'm telling you, it's YUMMY. I usually frost it with cream cheese frosting. It's always a big hit, and the addition of the homemade applesauce makes it taste like a "cake from scratch" -- no one is ever the wiser. :o)

Oh, and I know this isn't "technically" answering your question, because this isn't a recipe for a quick bread or cake...BUT, if you're looking for more ways to get rid of your lot of apples, another idea is to add them to stuffing (especially cornbread stuffing) next time you are doing a turkey or roast chicken. I usually do a cornbread stuffing with chopped apples, dried cranberries and walnuts, and that's really yummy, and a great way to use up some older apples that are hanging around this season.

Apples are good roasted with chicken or pork, or can be sauted with onions and served with the meat.

Here is an apple cheese quick bread recipe:
Apples, cheese and walnuts make this bread a moist and yummy treat. It tastes great with cream cheese on it!
Ingredients
1/2 C. butter, softened
1/3 C. white sugar
1/3 C. honey
2 eggs
1 C. whole wheat flour
1 C. all-purpose flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
2 Granny Smith apples, peeled, cored and shredded
4 oz. Swiss cheese, shredded
1/2 C. chopped walnuts
Directions
Preheat oven to 350 degrees. Lightly grease a 9x5-inch loaf pan. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the honey and eggs. In a separate bowl, sift together the whole wheat flour, all-purpose flour, baking powder, soda and salt. Add the flour mixture to the butter and egg mixture; mix until combined. Fold in the apple, cheese and walnuts. Spoon batter into prepared pan. Bake at 350 degrees for 50-60 minutes, or until a toothpick inserted into the center of the loaf comes out clean. Turn the loaf out onto a wire rack and let cool completely.
Yield: 12 servings

I saw a great recipe for an apple - butternut squash soup earlier. Add uncooked apples to salads, or with cheese and crackers, you can add apples to a coffee cake recipe. Buy some pre-made puff pastry and do all sorts of things with apples. Even better, you can remove the core, stuff the inside with walnuts, brown sugar, cinnamon and butter, and bake them (in a pan with a little bit of water so as to prevent scorching) and even pour a little maple syrup over the tops. Baked apples are a wonderful traditional dessert this time of year.

Buttery Apple Loaf
Cake
2 cups all purpose flour
3/4 cup granulated sugar
2 tsp baking powder
2 large eggs
1/2 tsp salt
1/2 cup butter (1 stick) melted
1/2 cup whole milk
Streusel
1 stick butter, melted
1/2 cup packed light brown sugar
2 tsp cinnamon
1 cup flour
2 medium granny smith apples, peeled, halved, cored and cut in 1/2 inch dice
Preheat oven to 350 degrees. Coat a 9x5x3-inch loaf pan with non stick spray.
Streusel:
Stir ingredients in a medium bowl with a fork till crumbly; set aside
Cake
Stir flour, sugar, baking powder and salt in large bowl till blended.
Beat eggs in a medium bowl with a fork just to blend. Stir in butter and milk to combine. Add to flour mixture and fold with rubber spatula just till dry ingredients are moist. Spoon half the batter into pan. spread to cover bottom. Sprinkle with 1/2 the apples and 1/2 streusel. Spoon on remaining batter spreading to cover. Sprinkle with 1/2 streusel and the remaining apples and remaining streusel.
Bake one hour and 10 minutes to 20 minutes or till pick comes out clean. Cool in pan a rack 10 minutes run a knife around sides, invert cake on rack; turn streusel side up and let cool completely.

Whole Wheat Apple Muffins
Adapted from King Arthur Flour
These dark, crazy moist muffins will keep well for several days, and the brown sugar on top, should you not skimp on it like I did, adds a crunchy touch, perfect for those of you who know that the lid is the best part.
Yield: They said 12, I got 18
1 cup (4 ounces) whole wheat flour
1 cup (4 1/4 ounces) all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon salt
1 tablespoon cinnamon
1/2 cup (1 stick, 4 ounces) unsalted butter, at room temperature
1/2 cup (3 1/2 ounces) granulated sugar
1/2 cup dark brown sugar, packed
1 large egg, lightly beaten
1 cup (8 ounces) buttermilk or yogurt
2 large apples, peeled, cored, and coarsely chopped
Preheat the oven to 450°F. Grease and flour an 18 cup muffin tin and set aside.
Mix together the flours, baking powder, baking soda, salt, and cinnamon, and set aside. In a separate bowl, cream the butter and add the granulated sugar and 1/4 cup of the brown sugar. Beat until fluffy. Add the egg and mix well; stop once to scrape the sides and bottom of the bowl.Mix in the buttermilk gently. (If you over-mix, the buttermilk will cause the mixture to curdle.) Stir in the dry ingredients and fold in the apple chunks.
Divide the batter evenly among the prepared muffin cups, sprinkling the remaining 1/4 cup brown sugar on top. Bake for 10 minutes, turn the heat down to 400°F, and bake for an additional 5 to 10 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Cool the muffins for 5 minutes in the tin, then turn them out onto a wire rack to cool completely.
