Apple Fritters

Being apple fritter time of year, Fall, we had Apple fritters this morning. We have always used Granny Smith, and they have been great. My wife wanted to have the apples come out a little softer, so she steamed them a bit prior to cooking, so that the fritters could stay in the oil a little less time. They came out fine though she wanted to have a little more apple flavor.
So we are wondering what kind of apples others use for their apple fritters.
