5 lbs of frozen vegetables

I have a 5 lb bag of frozen "stir fry" vegetables that I meant to take on a family vacation and forgot. They are now sitting in my freezer because I can't think of anything creative/delicious to do with them. Any suggestions?

Put them in soup/stews. Make stir frys with them. Add to quiche or any other egg recipes.

luckily frozen vegetables stay for a decent amount of time. soup is a good ideas as well as stir fry. also throw them in pasta or mix with rice and a protein. use them like you would use any other vegetable at meal time. sometimes if you pick out a certain vegetable it might make it easier rather then looking at the whole variety at once.

Paella maybe?
Stews are always good, seeing as it's fall now :)
Pot pie? Chicken, turkey, veggie?
Shepherd's pie?
Add to risottos/grain salads
Make homemade veggie burgers
Mac and cheese with veggies

I could easily get through 5 lbs of veg in a week :)

Ever tried grilling them? Put some in a colinder, run some water over to thaw. Heat a cast iron skillet on the grill (or the stove if you're not grilling) while grilling any other meat, add some oil to the pan and toss the veggie's in the pan when the pan is hot. Add whatever grill seasoning you like to the veggies and let them brown a little, stirring occasionally.
