Vegan desserts

So...for health reasons I have to steer clear of dairy, sugar and wheat (the 3 tastiest things!!!!). I'm actually doing OK as far as breakfast, lunch & dinner, but I have a MASSIVE sweet tooth, and I love to bake.

Does anyone have some really good vegan dessert recipes that even my meat & potatoes boyfriend will love? I like agave nectar, almond milk, etc. so no worries there...one more difficulty - no soy if possible (at least not too much)...Thanks!

Online, the website 'The Post Punk Kitchen,' and the blog Veggie Girl--even Cookie Madness (not vegan, but has vegan cookie and gluten-free recpies) are good sources.

One recpie I make is a flourless peanut butter cookie recipe--1 cup peanut butter (or your nut butter of choice--almond butter works well), 1 cup sugar, 1 egg, 1 teaspoon vanilla extract, and 1 teaspoon or so baking soda. You can shrink or increase the amount so long as you keep the ratio even (to halve it, use about 1/8 cup of a beaten egg, or about 2 tablespoons). Cream butter and sugar, add egg beaten with baking soda.Bake 10-12 minutes in a preheated 350 oven.(Adapted from recipes on Cookie Madness and Recipezaar)

If you want to eliminate egg and sugar, you could try it with Splenda and a vegan egg substitute, either something commercially bought or flax seed, although I haven't tried that.

Similar to what HeartofGlass said, I recently made a vegan, gluten-free chocolate chip cookie from the Veganomicon cookbook. The finished product was yummy, though unlike most cookies, the raw cookie dough tasted horrible. Eating raw dough is the best part of making cookies, but anyway... (I kept forgetting it was bad and tasting it again.)

I love baking with ground grains. Put some oats in your food processor or coffee grinder. I also love ground quinoa, bulghur, and even some almonds ground in with it.
Banana bread is a great recipe that uses the fat of nuts and the sugar of bananas to give it flavour.

I love poaching peaches with a small amount of maple syrup and water.

Cobbler! Use quinoa flakes instead of wheat flour for the topping, maybe? (I haven't tried this yet, though). Or pudding made from silken tofu and fresh fruit?

I agree with HeartofGlass -- "Post Punk Kitchen" is a wonderful source for that sweet tooth of yours!

Cobblers are good, too -- use oats and nuts for the topping (if gluten is a problem, there are Gluten-free oats available at Whole Foods. They are more expensive, but since gluten is a problem for me, I buy them and make desserts AND granola with them.)

And, if you are baking, Applesauce is your friend! It can replace eggs in some recipes, and oil or butter in others.

I've got a bunch of vegan, agave-nectar-sweetened recipe on my site, Altered Plates, you might want to check out. Just scroll down a few recipes from the top to get to the vegan ones I've posted recently. Also, I only use agave nectar as my sweetener, so no worries about cane sugar.

if you've got a blender, you can try whizzing up some frozen peaches and raspberries along with agave nectar, lime juice and vanilla for some delicious sorbet.

i also like to make shakes in my blender. i once tried making a coffee shake with almond milk but it tasted nasty. i bet a chocolate one would work, though. or you could try rice or soy milk. i use a couple of tablespoons of great quality unsweetened cocoa powder, a small tray of ice cubes, agave nectar {i love it too} and enough milk to let it whip. add some vanilla and a little instant coffee powder if you like,and buzz it on ice crush long enough to dissolve the ice completely, at least a minute. you get a really thick yummy chocolate shake.

If you're avoiding sugar for animal reasons, there are companies that don't use bone char in the refining process. I've had good luck with Sucranaut.

Candle Cafe! they have a cookbook thats devine.

Apple and raspberry crumble, topping made with quick-cook oats, margarine and your choice of sweetener. (I like honey myself, but I can't tell if it's on your list of no-no's.) Your boyfriend can top it with ice-cream if he insists. :P

Roasted Pears or Poached Pears
Almond Praline or Hazelnut Praline made with maple syrup and maple sugar
Strawberry Banana Sherbet - the recipe calls for sugar but you can certainly substitute with agave nectar
