Spelt help
Happy labor day everyone! I hope you're all enjoying your tasty eats today. I have been recently wanting to try spelt bagels, pasta, etc. However on the ingredients list of many spelt items next to spelt flour in parenthesis is says wheat. What does this mean exactly? Thanks for the help :)

Spelt is a species of wheat (and it contains wheat gluten). However, some people who have problems digesting normal wheat are able to eat spelt. It is nutty and delicious, although spelt bread is generally denser than normal wheat bread. I also use it (in combination with buckwheat and millet flours) to make fantastic pizza dough. Long live spelt!

The explanation above is really good.
Also, people who sometimes are allergic to regular wheat tollerate well spelt. I use it regularly to bake cookies, bread and cakes. It behaves exactly the same as AP flour when substituted in recipes.

I use spelt exclusively for all baking, cooking and flour needs. White or whole berry.

Spelt is classified as wheat by the FDA. Same genus, different species. It has a nutty taste and the whole spelt is high in protein, fiber and B vitamins. Both spelt and wheat have gluten (no celiacs should eat either one), but as caley said, many people find spelt is easier to digest. Our son was diagnosed with many behavioral disorders at ages 3 and 4. After specialists, tests and research, we found that it was his diet that was at the root of his issues. Wheat, artificial food colors, and high fructose corn syrup were the major culprits. Once out of his diet, his behavioral issues were gone and now (at 11 years old), he is a happy healthy kid with no behavioral problems at all. In fact, he's a model student, excels in his classes, loves to read and has many friends. He is also a great advocate of being aware of what you eat.
