red cabbage - how should i cook it?

just got some beautiful red cabbage at the green market. i made cole slaw already but i still have quite a bit left. i've chopped it up into bite size pieces - now what? i want to cook it for dinner tonight - any suggestions?

I instantly think of a traditional german side dish called "Rotkohl (Red cabbage)"

• 1/4 cup olive oil
• 2 cups red wine vinegar
• 1 cup water
• 1/4 cup granulated sugar (or brown sugar)
• 1 teaspoon whole mustard seeds
• 2 cloves
• 2 cloves garlic, peeled and thinly sliced
• 1 large head red cabbage, thinly shredded
• Salt and freshly ground pepper

Preheat grill to high. In a medium saucepan, combine the oil, vinegar, water, and sugar over medium heat, and cook until the sugar has melted. Add the mustard seeds, cloves, garlic, and cabbage, and cook until the cabbage is soft, about 15 to 20 minutes. Season with salt and pepper, to taste.

This pairs up great with some brats, european weiners, or pork hawks and will keep you warm in the fall season! Good luck!

Sliced and sauteed with apples and potatoes!

I second hungrychristel's suggestion. Only I usually fry up a little bacon or pancetta first and use the leftover fat to sautee onions, garlic, and the shredded cabbage before adding the wet ingredients, some peeled and sliced apples or pears, and allowing everything to simmer until tender. Great with brats, polish sausage, roasted pork tenderloin or pork chops.

@hungrychristel--2 cups of vinegar seems like a lot. I usually do equal parts water, wine, and vinegar, bring to boil, simmer, and reduce.

Oh, another thing is "baked cabbage." I don't have a recipe, but it's one of my favorite sides at a local Italian restaurant. It seems like it's just roasted with balsamic, olive oil, carrots, onion, a little sugar, and a ton of black pepper. It's one of those melt in your mouth sort of things. So comforting and not a lot of guilt for eating a whole platefull.

Hmm I do remember a bit of fruit flavour now that I think about it. Pears and apples would be awesome, and you can't go wrong adding pork fat! @wookie - Do you add sugar still with the fruit? Maybe I prefer mine more tarte? I will definietly try your ingredients in my next batch! Sometimes I can some in the fall; I hope I have time this year!

I like it sauteed with apples, onions, caraway seed and even throw in a handful of raisins.

thanks! i had seen a recipe for the apples thing - but i'm not really feeling that for tonight. i might add some bacon to the first recipe?? do you think i can cut down on the recipe - as i only have half a head of cabbage?

Shred the cabbage. Quickly sweat it in a small amount of oil. Add about 1/2 bottle of red wine (any will do) along with some cider vinegar, shredded apples, salt and pepper. Maybe a little sugar if you think it needs it. Let it cook until the liquid is almost gone. Then add a good amount of goat cheese.

There is a braised cabbage recipe that I got from watching Alton Brown's Good Eats & WE LOVE IT!

2 tablespoons canola oil
1 Granny Smith apple, peeled, cored, and cubed
1 pint unfiltered apple juice
1/4-teaspoon caraway seeds
1 1/2 teaspoons kosher salt
Freshly ground black pepper
1/2 head of red cabbage, shredded

Heat the canola oil in a pan over medium heat. Add the apple to the pan and cook until lightly browned. Increase the heat to high and add the apple juice, caraway seeds, salt, pepper and cabbage to the pan. Cover the pan and shake to toss the cabbage to coat.

Reduce the heat to low and cook for 20 minutes.

** It's even good COLD!! **

I wonder if butter braised cabbage would work with red cabbage? I've only ever made it with green.

1/2 cabbage thinly sliced
2 tbsp oil
2 tbsp butter
1 onion thinly sliced if you want
salt to taste

heat oil and butter over medium high heat in fry pan. add cabbage and oil. cook down until golden brown and really soft. this takes a good 20 - 30 mins. the cabbage will be oh so tender and sweet. add salt to taste.
