Need some Dill recipes

My husband loves Dill. I am trying to come up with recipes to use dill. Any healthy recipes you would like to share???

There is an abundance of fresh zucchini and summer squash this time of year. I just slice it along with some onions saute it in olive oil and add some dill and garlic salt. It makes a nice veg for dinner.

Dill is excellent in tartar sauce with fried fish (sorry, not so healthy)... or dill/lemon salmon. I've also had success with dill/lemon chicken.

Tzatziki sauce:
Lg container of plain yogurt, drained (or lg container of Fage, not drained)
1 clove of garlic, minced
1 cucumber, seeded and diced
a ton of dill- as much as you like
salt/ olive oil to taste

Mix this stuff together, and let it sit for at least a few hours before serving. Enjoy on grilled chicken or meat, pita wedges, grilled veggies, as a salad dressing, on french fries or raisin bran.

(ok, joking about the raisin bran, but my point is that Tzatziki is good on almost anything)

I love adding dill to red wine vinegrette. It can be used as salad dressin or marinade. I know you said healthy but this is a wonderful and easy dip/ spread for veggies or crackers:
1/2 cup sour cream
1/2 cup mayo
1 tbsp dill
1 tbsp garlic powder

I add minced dill to tuna salad. It's even great on crackers foe a little snack.

I grew up in a Polish household (think My Big Fat Greek Wedding with kielbasas and polka), and dill was as common in our food as salt and pepper. I love it in chicken and tomato soups, in cucumber salad, mixed into tuna or egg salad, or tossed into salad greens. I also like to poach salmon in a little bit of water and white wine and top it with a cold cucumber dill sauce. I've made veggie and herb frittatas with it before too.

Have you ever had a cheddar dill scone? I'm not much of a baker, but I am a big eater of those green-flecked cheesy bites of deliciousness.

At my old job we did a nice, popular tuna salad with high-quality tuna, white beans (cannellini), sliced scallions, dill, lemon and olive oil. Very heart healthy, if not exactly low-fat.

I also love the Greek chicken lemon and egg soup (avgolemono? not sure on spelling) with dill, but to simplify, a basic chicken soup using dill as the main herb, perhaps a few skinny egg noodles, is very nice.

One of my favorite open faced sandwiches is a slice of bread (or split English muffin) lightly buttered, with a slice of ham or Canadian bacon, slice of tomato, slice of swiss cheese, and some dill on top. Broil till bubbly.

Not so much healthy but totally versatile and addictive: use a food processor to pulse some dill with some arugula, then mix into mayonnaise. Use it for everything (especially good with roasted potatoes or broccoli or fish).

More tips on the tzatziki: try shredding or grating the cucumbers and squeezing the water out for a thicker sauce. Also, lemon juice and/or a touch of red wine vinegar.

I love dill in mashed potatoes, with fresh or frozen peas, it's a must have in tuna salad, on cottage cheese & tomatoes. Smoked salmon with thin sliced red onion, capers, and dill - to die for. I like dill with carrots too.

Thinly slice cucumbers and red onions, put in a bowl and add a touch of olive oil, some red wine vinegar, salt & pepper, and lots and lots of dill, let marinate for a few hours and enjoy.

I'd give you Grandmother Pearl's Swedish Meatball recipe - but it's not healthy in any sense of the word - unless bliss inducing comfort food counts as "stress reduction".

Baked Salmon with Dill Garlic Beurre Blanc

Ingredients

2 lb. salmon, fresh, fillets
1/2 C. white wine
8 Tbs. butter, cold, cut into 16 pieces
1 tsp. dill weed
1/2 tsp. garlic, minced

Directions

Preheat the oven to 375 degrees. Bake the salmon for 12-15 minutes. The fish should be firm but not dry. Place the wine, dill and garlic in a small saucepan. Reduce on high heat until almost dry. Remove from the heat and quickly add all the butter while whisking briskly. When all the butter has been incorporated, allow to rest 10 minutes. Spoon over the hot salmon.

Yield: 4 servings

Scandanavian foods often use dill as an ingredient.

Here's a recipe for a pea soup that uses a generous amount of dill.

I bombard my orzo salad with dill.

I forgot potato salad and beets!

my kids all asked for this recipe when they set out on their own and now they keep passing along to their friends. it's quick, healthy, and delish. easy for any old night and good enough for company:

for one pound of salmon:

mix together 2 tbsp. dijon mustard, 1/2 cup plain yogurt, i tbsp. fresh lemon juice and lots of chopped dill and s & p to taste. bake uncovered at 350 for 20-30 minutes (till fish is done). sprinkle with fresh dill to serve. nice with simple boiled and buttered potatoes or noodles.

you can also use sour cream in place of the yogurt, for a slightly different and richer variation. my family prefers the yogurt.

Make a quick and easy summer soup. Blend chopped cucumber, lemon juice, plain yoghurt and lots of fresh dill to green flecked smoothness. Check the seasoning, then leave in the fridge for half an hour or so.

For one of my vegetarian friends I found a recipe that combined leeks, cabbage and diced potatoes all of which were cooked in water (can use chicken stock with the right company) and then added a bunch of dill. Never thought the taste would be so good. Also added lots of butter. surrah@optonline.net
