Lots of cilantro...

...and no idea what to do with it.

I bought some for a recipe I've been craving and realized that it only needed about 1/3 of a cup. Now I have most of the bunch left over and I hate to waste food.

I know its usually used as a garnish, but that's not going to cut it here.
Help me out here please?

Asian dishes use cilantro, also try making a salad dressing with 3 parts veg oil 1 part olive oil, cilantro chopped fine (you can use quite a bit if you really like the taste of cilantro), fresh lime juice (this replaces the vinegar), ground cumin to taste, pinch of sugar, salt and pepper to taste. It goes great with an avocado and tomato salad.

try this: put the cilantro in the food processor with some garlic cloves, honey, soy sauce, pepper, olive oil, and fresh lime juice. buzz it up and use it to marinate some chicken, then bake the chicken in the marinade skin side up until it's done, about an hour or so. serve the rest of the cilantro strewn artfully on top. serve the chicken with some rice.

If you have salsa mince cilantro up and throw it in that, or make some homemade. You coud put it in Asian chicken salads. Mince it in chilli or some soups/stews. In marinades.

Just make a simple tomato salad, since they are in season now: tomatoes, garlic, sea salt, freshly ground black pepper, olive oil and finely chopped cilantro. I had a variation of it just this morning; I used yellow and red tomatoes and added a ripe avocado - so lovely!

I get takeout pad thai and add cilantro liberally, as in half noodles, half cilantro.

Or chicken and chinese black mushroom congee, or steamed fish with ginger, green onions and said cilantro on top.

If you've ever been to an Indian restaurant and had an appetizer served with a dipping sauce that is bright green, spicy and wonderful then you'll know cilantro-mint raita. It uses a generous amount of cilantro. Here's a link to a recipe.

throw it right in the garbage......before you ruin any dish with it....lol

I love cilantro added to the greens in my salad. Herb salads are so flavorful, I almost forget I'm eating salad.

I also add stems to my chicken broth stock. It makes great tortilla soup.

i chop it up and freeze it in little containers so if i need it to flavor something like soup or curries -- it comes in handy when you're cooking on the fly. i'm always glad i saved it instead of letting it get slimy in my
vegetable bin....(when i have my act together, that is)

throw it in with basil and some parsley for a peruvian style pesto. mmm.

make guacamole!!

Onepercent I agree!!! throw it away or you could use it if your kid starts cussing, after all it does taste like soap. ;-)

Chopped cilantro and onions tastes good on tortilla chips. They give you a bowl of it with your chips at tacquerias here in houston. You can dip the chip in salsa or not before you pile on the cilantro.

I like it on sub sandwiches instead of lettuce with shredded carrots. Just like Vietnamese sandwiches.

I love cilantro.
