Be careful what you do with those scraps - as it may commit you to that item forever!
I use RLB's Cheddar Pie Crust for apple pie all the time. I had scraps and decided to use my gingerbread man and woman molds to cut some shapes. I glazed with egg wash and sprinkled turbinado sugar on them and baked them off. I served them as part of my dessert spread for that year's T-Giving. My daughter fell in love with those cookies.
Now I have to make a batch of the pie dough just for the cookies!!

for a savory treat, sprinkle with parmesan or other grated hard cheese and a little cayenne and bake them. and i love to sprinkle mine with cinnamon sugar.

I say fry 'em up and then add cinnamon sugar or cybercita's cheese idea. Fried is always better!

I re-roll the scraps into one crust, sprinkle with cinammon, sugar, nutmeg and roll like sticky buns. Then bake. A good project for kids. My mom called them Curly Q's.

Will definitely try cookies . . . and all the other ideas so far. Also, combining cybercita's cheese/cayenne combo with Blue Iris's roll-up idea could make for an interesting hor d'oeurve.

My mom also made the rolled cinnamon/sugar cookies out of leftover pie crust...sometimes she'd roll each one around an apple slice (sort of in the shape of a crescent roll, but smaller) so it was similar to a one-bite apple pie.

make tiny turn overs or mini pies

I've done the cookie thing too. Kids seem to love them. You could also just sprinkle the scraps with some sugar, bake them off, and use them to top a sort of deconstructed apple pie. Saute apples with a little lemon juice, sugar and cinnamon and serve in bowls topped with the baked scraps and a scoop of vanilla ice cream. The nice thing about this is that your crust won't get soggy.

My Mom used to re-roll the scraps, tcut them into strips using her "crinkle-edged" cutter, then sprinkle them with sugar and cinnamon before baking.
We would get to eat these fresh out of the oven, and called them Pie Dough Biscuits.

My grandma used to knot them, fry them and sprinkle with powdered sugar.
We called them "cenci"...rags. They're just scrap cookies, but SO yummy :)

my mom used to roll them out spread a thin layer of margarine on them and sprinkle with cinnamon and sugar, then roll them up and bake with an egg wash, they were always fairly small and for some truly strange reason, she called them poops. when i was very little i asked why they were called that and she opened the oven door and there they were baking just below the pie, she said that was how you knew you needed to cut more steam ventsin the pie, because if you didnt have enough the pressure built up and the pie "pooped" I come from a long line of weird people :S

you can also put some jam of your choice in them and roll them up, kinda like a rugulah-ish cookie.

My mom always made "krotzie" - similar to what everyone else is saying, she'd put a little butter of margarine on them, sprinkle them with cinnamon and sugar, and bake them along with the pie. And you have to leave them in their funny shapes, no re-rolling, that's half the fun! Krotzie was always a huge treat, almost better than the pie itself!

My mom used to make mini empanadas out of them. Tthe savory ones would depend on her mood. The sweet one again on mood, my fav was when she made the sweet empanadas stuffed with Nutella.

My bf wants me to add what his mom used to do with the leftover pie dough. She would roll leftover dough out and cut into long, thin strips. Then she would baste lightly w/ butter and sprinkle w/cinnamon and sugar and bake till crisp and serve them hot. It uses the leftovers and is a simple treat that kids find irrisistable. Try it!! Enjoy.
