How to serve Pickled Pumpkin

I work in a Vegetarian/Vegan restaurant and pickled pumpkin yesterday (Recipe http://tinyurl.com/4tpndb). Now I wonder how I could serve this as an amuse bouche. I cut it in julienne on the mandoline, so it pickles faster.

Any Ideas? It should be vegetarian, if vegan even better.
