Green Side Dish Suggestions Needed!
So I'm having dinner guests tomorrow, and I'm making roasted pork loin with a mustardy sauce. I'm also probably going to serve a simple leek soup, but I need suggestions for a side, preferably green, that would go well with pork. Any thoughts?

I would make a simple veggie spinach or broccilini sauteed with olive oil and garlic.

I do have some red swiss chard...should I just chop and saute it with onions? I was going to use it to make a risotto, but I feel like that might be too heavy as a side, what do you think?

It depends on who your guests are:-) - I was about to write that I'd certainly opt for sauteed swiss chard with onions, while my OH said that he'd undoubtedly prefer risotto with swiss chard as a side.

I definitely went for the sauteed greens option as soon as I saw this post. Chard or spinach would be great. Why not serve a nice loaf of bread as a starch.....

Here are some that I've tried that are worth it and will go well with pork:
glazed brussel sprouts
beet salad
easy spinach salad
warm bacon salad
swiss chard with raisins
another spinach salad
all of these are really nice--I think fruit goes nice with pork. Good luck :)

Not sure if it's greens ya wanted versus green veggies, so my suggestions may be out of place. :P
- grilled asparagus - with the pork theme, you can wrap it with bacon; although, it might be a little too heavy
- roasted asparagus spears and zucchini (for color, yellow squash and red peppers and/or cherry tomatoes)
- tabbouleh (yes, a bit odd, but the tart/fresh flavor is a nice break for me when I eat meat)
- fresh Greek style green beans

I like roasted asparagas with parmesean (although not really in season), grilled zucchini, or green beans sauteed with garlic and olive oil.

Last time I served pork for guests, I sauteed really fresh string beans in some butter with sea salt and black pepper, and mixed in some toasted pine nuts. Toasted slivered almonds are good, too.

My first thought was sauteed green beans with garlic, oil and pine nuts. Sauteed spinach, chard or collards would be delightful as well.

If you do a salad, maybe put in apples. I agree with hungrychristel about fruit and pork. Have a nice dinner.

We had a lovely field greens salad with pears, fennel, and hazelnuts with a raspberry vinaigrette last night. Brussels sprouts would be great too, or a sauteed green cabbage with apples and red onions.

I really like green beans with mustard, so that would be my vote. Depending on how heavy your sauce is, you might want to dress them with a mustardy vinaigrette and toss with diced red onion and pecans or walnuts.

I instantly thought of spinach sauteed in olive oil with fresh garlic and a touch of crushed red pepper flakes.

i think you need something fresh to balance all the cooked stuff.
I would do a fresh green salad with different lettuces - romaine, arugula, watercress, frisee, thin slices of green peppers, very thin slices of fennel - with a green godess dressing. For the dressing mix a bit of cream cheese, mayo, olive oil, lemon juice, scallions, parsley, basil, salt and pepper. Divine!!!
Or grilled or roasted asparragus drizzled with a lemony vinaigrette and pieces of parmesan cheese.

toss sugar snaps and chunky-sliced scallions with a bit of olive oil and sea salt, and roast at 425/450 until they are tender and just caramelized. a sleep hit, i promise.

with the leek soup, i think a nice substantial salad .... maybe a warm potato salad with a garlicky-caper dressing on a bed of baby escarole or something..... so you're taking care of a side and salad in one dish.
or go the fruit route -- a spinach salad with figs or pears with walnuts,
red onions with a maple-balsalmic dressing....

kerry is correct on the sugar snaps. another simple flavor that works well with them is fresh thyme.
so fresh sugar snaps, fresh thyme, olive oil, kosher salt in a 400 degree oven for 7-10 minutes. crisp tender.
this green goes especially well with jerk pork as thyme is used in that combo too.

Yum! The apple sauce sounds great, even if it's not green. Otherwise, I'd opt for the grilled asparagus. Make a little extra mustard sauce to serve over them.

If you're looking for full flavor, green beans with chopped walnuts, largish chunks of garlic, cooked over high heat with walnut oil. Start with the beans and add the walnuts and garlic toward the end so they roast without burning. Sprinkle with sea or kosher salt (not too fine a grain).
If you want something simple, agree with recos above for steamed green beans or chard tossed with salted butter.

Last night I made braised pork shoulder with apples, dried wild mushrooms and rosemary and thyme from my garden. I steamed up a big mess of beautiful collards to go with. Delicious, simple and seasonal.

I vote for grilled broccollini...toss with EVOO and fresh garlic, then grill over medium flame....simple, fresh and delish.
Here's a great salad, too:
Toss together: arrugula, baby greens, dried cranberries, crumbled bleu cheese, roasted almond slices, red onion, grape tomatoes, crumbled bacon, and a balsamic vinegarette -- This salad is ALWAYS a huge hit at my parties, and people are always taking seconds...of salad! imagine!

Wow, thanks guys! These all sound amazing...I think I'm going to go with the swiss chard, but I'll dress it up a little. I also made the 4 layer chocolate cake that's on the epicurious homepage right now...great recipe, if anyone was thinking of trying it!
