Easy Pie-Like Dessert? Help
My husband's birthday is tomorrow, and he is not big on birthday cake. I'd love to make a pie, but I'm short on time. Does anyone have a great, easy recipe for a fruity/pie-like dessert? Maybe a tart of some sort? At this point I am not opposed to using store bought crust. I know he will appreciate it as long as it's not from a bakery and tastes delicious. Thanks!

What about like a banana cream pie made with pudding mix and an easy graham cracker crust?

my quickie pie:
get an oreo cookie crust (they might have these premade-otherwise, it's simple-just break up 24 oreos, mix with a little melted butter, and pack it into a pie pan)
then grab marshmallow cream, extra creamy cool whip, and some creme de menthe liquor. mix that up, spread into the pan and freeze it.
i usually do it for st. patty's day-it's green and minty and kind of reminiscent of an ice cream cake.
i like to use the mint oreos if i can find them. you can also crumb or arrange more on top before you serve it.

You can mix a block of mori-nu tofu with coffee and chocolate, then pour it into a chocolate cookie crust and let it sit overnight. I put caramel sauce on top, too.

Here's a delightful, cool, tasty, and easy to make Key Lime Pie. Key lime juice is readily available at your supermarket.
2/3 C key lime juice
1 pkg Knox unflavored gelatin
1 Graham Cracker crust
8 oz Cool Whip (thawed)
8 oz Sour Cream
1 Can Eagle Brand sweetened condensed milk
1. Combine Cool Whip, sour cream, and condensed milk.
2. Quickly stir gelatin into lime juice and mix into above combination
3. Pour into pie shell and refrigerate for a couple of hours.
4. Store and serve cold.

How about a cobbler or crumble? Super easy. Takes a while to bake, but almost no time at all for prep.
Also, any kind of custard-filled pie will work with a cookie or graham cracker crust. You can top the custard with fresh fruit and glaze it with melted jelly to create a simple tart-style dessert.

I second a cobbler or crisp if he's into fruit. Just cut up some fruit (apples are good, with some sour cherries thrown in), toss with a small amount of sugar and flour, and make the topping from cold butter, flour, sugar and spices and distribute on top. Then all you have to do is bake away!

A simple go-to fruit desert:
In a 9" pie plate, add one can of your favorite pie filling (cherry, raspberry, blueberry, strawberry, peach) In a separate bowl, mix one package of "Jiffy" brand yellow or white cake mix and 1 stick (1/2 C) butter or margerine. Cut together until crumbly. Put topping over pie crust and add 1/4 C pecans (optional) and bake at 350 degrees for 25-30 minutes.

@bubbamom: That's a delicious thing I haven't had in years! I might just have to make it this weekend now that you've reminded me. My mom & grandma call that one "dump cake", but they mix a can of crushed pineapple (drained, of course) with the pie filling. Yum!

Banana-chocolate crostata. Take a pie crust (made or bought), mix 1 package of cream cheese, an egg yolk, and about a quarter cup of brown sugar together, spread on the crust leaving about an inch around it. Layer sliced bananas as haphazardly or anal-retentively as you wish; sprinkle chocolate chips over it (and chopped nut of your choice if you like), fold up the sides in a rustic fashion, crimping the folds, baste with egg, bake til GBD. Easy!

If you really wanted to cheat, you could take a store-bought graham cracker crust and fill it with some high-quality ice cream, either fruit flavored, or vanilla ice cream topped with fruit, and some streusel, or perhaps some good shaved chocolate and fancy candy.

How hard is it to whip some cream in a mixer, takes all of a few mins.
You guys are scaring me.
Do a cobbler. It is easy and cheap. Buy some fruit or frozen berries and just put it in the oven serve it with real whip cream or ice cream.
Every year my mother requests a 3 berry cobbler.

here's one i've made dozens of times.
whisk together a cup and a half of flour, a tablespoon of sugar, and a half a teaspoon of salt in a pie plate or 8x8 pan. then whisk together a half a cup of vegetable oil, a teaspoon of almond extract, and two teaspoons of cold milk, then add it to the flour, stirring with a fork until it starts to clump, then mix it with your fingers and pat it down onto the bottom and up the sides. don't worry if it's greasy.
peel and slice very thinly about 3 large or 4 or 5 small apples and lay them onto the crust. you may want to dip them in lemon juice if they haven't got much flavor. then sprinkle on top:
4 T cold cut up sweet butter
1/2 teaspoon salt
about 3 T flour {more if the apples are very juicy}
3/4 cup sugar {less if they're very sweet}
which you have combined and pinched together so that it looks like pebbles.
grate some fresh nutmeg on top. bake at 350 for about 45 minutes, or until the apples are soft and the crust is brown.
i wouldn't use granny smiths for this because they don't seem to get soft enough.
serve with whipped cream or vanilla ice cream.
this is a variation of the peach tart recipe in amanda hesser's cooking for mr latte. it's so easy to put together, and the crust is delicious!

Frozen Peanut Butter Pie
Ingredients
1 graham cracker crust
1/2 C. peanut butter, chunky or smooth
1/2 C. milk
1 8 oz. pkg. cream cheese, softened
1 C. powdered sugar
1 C. whipped topping (Cool Whip)
Chocolate syrup
Directions
Combine peanut butter, milk and cream cheese in a large bowl on low speed. Add powdered sugar and whipped topping, mix until smooth. Pour into piecrust. Take the chocolate syrup and starting in the middle of the pie swirl around the pie. Take a toothpick, starting from the middle of the pie, pull it towards you, then from the crust, probably about 2 inches from first line, pull the toothpick back towards the center, then continue around the pie. Freeze until firm. To serve, take out of the freezer 10 to 15 minutes prior to serving. Make a design on the plate with the chocolate, top with a piece of pie, and a dollop of coolwhip on the pie. Definite “wow factor” on this dessert.
