Desperately seeking a recipe
About 20 years ago I worked in a "one man" restaurant called Sam's Place. He made an awesome pita sandwich with canned albacore tuna, shredded romaine lettuce and lots of oregano. I've tried to duplicate it but I'm missing something and I can't figure out what it is!
Since I can't get in touch with him to ask for the rest of the recipe I was wondering if anyone here has something similar in their recipe box.

a little red wine vinegar might be in order. Some capers would also add immeasurably to the tuna sandwich you're referring to.

Might be fresh lemon juice, garlic (fresh minced or even "powder" maybe) and a few generous grinds of black pepper . . .

what you're describing sounds like either tuna nicoise or a tunisian tuna sandwich -- lots of google hits for either of those.
i had lots of tunisian tuna sandwiches in paris. it's tuna in a bread pocket, with oil, vinegar, capers, hard boiled egg, and lots of veggies and fresh herbs.

Try a recipe for "Greek" salad dressing. It sounds like your taste experience could be met by these components. Good luck!

Thanks for the suggestions everyone. Sams Place served all sorts of dishes. He'd do lasagne one day and gumbo the next.
I've just really been craving that tuna pita lately so I'm off to experiment with all the wonderful suggestions given thusfar.
I'll post it if it turns out close to his... it's so simple but so good!
