Botched recipe turned out ok?

I was making zucchini muffins from this recipe on myrecipes.com. I got the pan in the oven....and realized I had left out the 3 Tbsp. of oil. They came out slightly chewy on the outside and light and fluffy on the inside. Definitely not a crumbly muffin, but still pretty good. We made a second batch with the oil included, but they turned out pretty much the same, albeit a little more crumbly.

I often forget to double or half ingredients when I double or half the whole recipe. Sometimes it turns out, sometimes it doesn't.

Have you ever screwed up a recipe that, in the end, turned out ok?

Yup. Was making bread and wanted to add just a tad more water and thought I had grabbed the squirt bottle with water in it to spritz into the bowl of the stand mixer while it was running. Instead, it was the squirt bottle with cider vinegar. I was about three squirts in when I realized that it was vinegar. Oops.

yep, first time I made beef stroganoff, I thought it would be a yummy idea to add some red wine for flavor... know what happens when red wine meets sour cream?

Looked like cut up pieces of Barney over egg noodles.... :(

Tasted pretty good though, if you can get past the visual of eating purple meat.

Sometimes I forget to stir parm into the breadcrumbs when I make eggplant PARMESAN (duh!, I know). It turns out tasty still, but just a little different.
