What finger food should I take to the beach?
I am attending an outdoor ceremony at 10 in the morning on the beach on Sunday with out of town guest in tow. I have considered a variety of items but don't really want to get up at the crack of dawn to prepare say, empanadas or dumplings to take with us.
Something sweet would be ok. I might make a plum cake with cream cheese frosting the day before, but that's not really "finger food" which is what is requested. I don't want to risk cupcakes as I have never made them - (unless you have cupcake advice).
Any suggestions (besides going to the excellent bakery and forgetting about it - LOL) for me to take something special yet simple along for the ride?
All thoughts on this one deeply appreciated!

Instead of cupcakes, (I'm not a baker), I like to make mini cheesecakes. You can do them in foil cupcake liners, and you can cheat on the crust- a vanilla wafer or ginger snap works great. I personally like the ginger snap. Chill them, and they will hold up pretty well, and instead of a strawberry type topping, just throw some fresh blueberries (tis the season!) on top of each. Very easy to make, transport, and a coolpack on the bottom of the cooler keeps them fresh.

I'd say muffins, preferably mini muffins, they're basically one or two bites so the mess factor is cut down and they're really easy to make--just don't overmix!
Mini cheesecakes sound good too.

If it is morning why not mini- scones, perfect for elevenses...You can form them and refrigerate or freeze dough the night before. Take out an hour before baking (if frozen). Bake 12-15 minutes.

Are wraps ok at 10 a.m.? I make a variation on the ones Ina Garten did on one of her episodes. I put cold, curried chicken salad and lettuce in large flour tortillas (wheat, if you can find them). Just cut them in half, wrap them in cellophane or tin foil and you're set.

For something savory, how about mini frittatas? You can make just about any frittata recipe in regular or small muffin tins. Eggs, cheeses, spinach, mushrooms, onions, peppers, garlic...yum. Mix everything up the night before and bake in the morning.

You could make stuffed puff pastry with whatever filling strikes your fancy - cream cheese and spinach, mashed potatoes, mushrooms...
I really like the mini muffins idea, too - it sounds like the simplest and the fastest thing to make.

I have a few suggestions that you might like...
I make savory eggless fritattas - they're simple to make and can be made the night before and just reheated before you go to the beach so they;re not cold from the fridge. And no egg allergies issues.
I am a fan of dips - that you can eat with chips, toasted breads, crackers or even put inside a baguette and make it a sandwich. I like this versatile Veggie Dip or a Hummus or this Sweet Bell Pepper version. Or even a Guacamole.
Brown Rice Krispies Treats are also nice. They have almond butter instead of the traditional marshmallow.

Fried chicken is always my go to meal for the beach bought from the Tom Thumb down the street that makes better fried chicken than my grandmother!

Wow - some great ideas - thanks so much! I'll have to scope out these recipes you're offering Karma, and I love the wrap idea too. Although I tend to stay away from sweets, both the mini cheesecakes (ginger snap! Wow) and muffins sounds smart.
PS: I wish we had fried chicken but we're in podunk-ville USA and do not have a single place for miles around. LOL.

brooke29 - I combine the two, and make mini muffin cups out of puff pastry with a dollop of whatever stuffing in the middle. That way they're closer to one bite and make less mess to eat :-)
