Soaking onions in buttermilk overnight?

I've never made onion rings at home cause I don't like to fry, but I recently saw a recipe (I think it was linked on here) for Onion Strings that called for soaking the thin onions in buttermilk for about an hour.

I want to make them as part of dinner tomorrow and I won't have a lot of time for prep because of a late afternoon meeting, so I wanted to cut the onions tonight and just soak them overnight to save time.

Can anyone tell me what happens if they soak longer? Like...say... overnight?

YUM! Go ahead...we used to soak trays at a time at one restuarant I worked at...24 hours should be just fine. Just drain well and proceed.

You may see some water in the buttermilk, but no harm there. I don't think buttermilk is acidic enough to break onions sown that quickly if the onions are good and firm to begin with.

well they're sweet white onions, and they'll be cut very thin, so maybe overnight is too long based on what you said about them being good and firm?

as I said before, I don't fry, I've never made regular onion rings, let alone the thin strings/straws

love pioneer woman! and that should be fine...wouldn't go more than 36 hours....but that looks like our onions!

I feel so out of the loop, I'd never heard of pioneer woman until this recipe. :(

I put the onions in the buttermilk about an hour ago and I'll take them out when I get home from work tomorrow, so it'll be less than 24 hours.

i have fried enough onion rings to go around the moon and back and i haven't ever soaked them longer than 20 minutes or so--while i ws doing some other prep step- i am gonna try this recipe, though

I have a small window of prep time tomorrow after work and wanted to get this out of the way as long as it wasn't going to ruin the onions, I've nosed around and asked a couple of places and the consensus is that it won't make much difference, if you soak them for an hour or overnight.

I'll have my fingers crossed though, and as always with anything I make for the first time, I will learn from any mistakes made. ;)

I made these yesterday (self-link) and they were REALLY yummy.

@never - that's the recipe I used last night when I made them too :) they were great, but my dipping sauce needed some help.
