So, I had Garlic and Butter basted rotisserie chicken last night for dinner (with a pasta salad and mixed steamed herbed veggies). So good. But now, I have a lot of chicken left over. What do you do with your leftover chicken? I was thinking trying to make Chicken Enchiladas (but don't have a recipe)...Maybe Chicken Quesadillas? Any ideas and recipes are welcome!! Thanks :)
