How should I charcoal grill Tomahawk steaks?
I have the recipe for Bobby's Renata Grill Rub and have made it. After applying the rub to the steaks, how do you recommend I grill them on a charcoal grill? They are 2 1/2 inches thick and weigh 32-38 ounces each. Should I quick sear both sides over very hot charcoal and then move to a lower heat but still over charcoal or should they be finished (we prefer medium rare) by indirect heat with the grill hood closed?
