Labor Day Eats - What are you making?

As always I am wanting to hear what good stuff your going to do on the holidays. So gang let's have it post the menus.

35 Comments:

I am going to grill up massive meats, poultry, and veggies, have lots of beer typical. How about you, what are you going to do?

We are doing chicken, ribs, dogs, burgers and the usual sides of potato, macaroni and string bean salads. I am making a white bean humuus with pita chips. I am baking a banana cake with peanut butter frosting and ganache, brownies, snickerdoodles, and a fruit salad.
We are having a nice sangria, all kinds of beer and I am making some bloody marys for the early afternoon because we have been talking about it for a week now and I got a craving. Juice my tomato bitch!
Sorry what came over me.

I'll be returning from vacation on Sunday, so I'll probably just keep it light. I'm firing up the smoker with some baby baby ribs, a fatty (chub of sausage, flattened, stuffed with veggies & cheese, rolled in rub and smoked), burgers, dogs and some Atomic Buffalo Turds.

OK, since you asked, ABTs are jalapenos sliced lengthwise, seeds and membrane removed. Stuff with cream cheese and a Hillshire Farms Lil Smokie and wrapped in bacon. Smoke or indirect grill, depending on your equipment. Yum! (it's wrapped in bacon, how can it not be good?)

@jerzee Soooooooo what times did you say I should be there, should I bring anything? LOL. I am interested in that banana cake with the peanut butter frosting and ganche, do have the recipe for it? I am playing it low key, Tuesday I go back to work after a 2 1/2 month vacation. Don't want to be hungover with 100+ soroity girls rushing.
@northernbbqer the fatty sounds like a hotty. How do you make this? As for the ABT's.....I gained 10 pounds just reading about them, :)) I want to make those too.

@pjracz10: take a 1# chub of sausage, like Jimmy Dean. Put it in a ziplock bag and flatten it into a rectangle about 1/4" thk. Cut open the bag but leave the sausage square on it. Stuff away! I usually use onion, red pepper and some sort of cheese, but there are endless possibilities. Use the bag to roll it up into a log, sealing the ends. Pat on your favorite rub and throw it in a smoker (if you have one) until internal temp reaches 165-170F. You can alternately grill it but indirectly. Too much flare up if you go direct.

Here's a bit of ABT food porn to further taunt you!

Turds

We've got a busy 3 day weekend of partying....Friday I'm making hummus & chicken souvlaki for guests who are coming out to the lake to party @ the beach bars w/us.
I've been challenged to a rib cook-off...so we're doing that on Sat....there are 4 of us cooking....I'm looking forward to kicking some butt with all the tips I've gotten from hanging around here. I plan on dry rubbing the ribs, cooking them low & slow at home on the grill (indirect heat of course)....then finishing them up at the cook off w/homemade bbq sauce.
I think I'm going to make some of those ABT's for good measure...thanks for the idea & pic NorthernBBQer...those look great!
Sunday it's a cook out at Mom's....I"m making 3 bean salad...and probably more stuffed jalapeno peppers.
Have a great Labor Day everyone!

We're doing our annual hog roast. We'll have two of those beauties in the pit this year!

normally we'd grill out or something. but this year, i'm going to jamaica with a bunch of degenerates :P . the boy will probably smoke up a big piece of pig while i'm gone.

@NothernBBQer Nice looking Turds.....did I say that out load

In the past it's always been hotdogs, hamburgers, chicken and the usual salads and baked beans. This year son-in-law is grilling tuna steaks and scallops. They have voted for apple crisp for dessert. I'll hit the farm stand and pick some veggie of some sort .. thinking of summer squash/tomatoes .. any suggestions?

Husband cooks everything these days. Between the two of us, we always grill at least 10 burgers, 4-5 steaks, 12 kielbasa, and skewers of peaches, zucchini, and peppers. This year, he also wants to grill 15-20 chicken breasts and pack them away in the freezer to use over the winter so we can make bourbon chicken, as well as grilling some pork to put in jae yook bokum and kalbi.

I might make potato-egg salad.

Every year this guy from church does a hog roast. And we all bring the rest of the goods. There is always more food than you can find room for. And good stuf too.
Now to decide what to take...

Since I never recieved my invitation from @deeoh1 for that pig roast, I guess that I'll do up some beer brats, meatatarian kabobs (beef, chicken and pork) and fresh Jersey corn.

@jonfoxx:

It's still a few days away - you have plenty of time to drive to Indy! Just bring some of those meatatarian kabobs along with you and we'll get along fine. I have plenty of sweet corn growing in the garden and it will go in the smoker along with a few other surprises.

Im going to phoenix!!! too bad bianco is closed !!! curses~!

Good thing you reminded me of it, I've been so busy with work lately that i forgot what date it is! And we have friends coming over (who still remember the fourth of July feast:-)), so i better get myself in gear.

So far, I'm thinking baby back ribs with some bourbon-honey glaze or something like that, smoked sausages (yay to the new smoker!), grilled hot dogs and maybe burgers. Although I also have that pork butt in the freezer, maybe it's time for some pulled pork.

I may make baked beans again, as well as potato & red onion salad with red wine vinaigrette, oil & vinegar coleslaw and couscous salad. And grilled corn, of course! Not sure about dessert yet, perhaps we'll grill some plums and peaches.

I'm hosting a brunch for 12 with spinach and zucchini quiches, roasted beets, a chopped vegetable salad, and a peach and blueberry cake for dessert.

@northernbbqr Thanks for that recipes I can wait to try it. It sounds like a log of yum. I am thinking of a zillion things right now to stuff it with along with what you use. Maybe some potatoes, you ever tried it with eggs inside too? Everyone is making some great eats.

I am going to New England for the holiday. Lobster, Lobster, Lobster. Oh, and some clams! ;-D

Ok here are the assembling recipes for the banana peanut butter frosting ganache cake. It is an experiment and my take on a recipe and substitution of cake recipe
first Deb over at Smitten Kitchen did her take on Sour Cream-Chocolate Cake with Peanut Butter Frosting and Chocolate-Peanut Butter Glaze
from Sky High: Irresistable Triple-Layer Cakes
http://smittenkitchen.com/2008/08/chocolate-peanut-butter-cake/
and I added a curve ball by changing out the cake for an OMG Paula Deen recipe from her late mother in law Mrs Groover's Banana Cake over at Leites Culinara. (from Paula's Book It Ain't All About the Cookin')
http://www.leitesculinaria.com/recipes/cookbook/banana_nut_delight.html
So my new cake is the Banana Cake with Peanut Butter with chocolate ganache

If you make this holler out how it goes.

Oh man I can't wait to make this cake, I may add some banana liquer in the cake batter as well for that extra kick. Thank you and I will let you know how it turns out.

I've got my menu...chubs and turds! Is my mind in the gutter, or does anyone else think this picnic should be rated X?

@josdean Triple x. So what sort of rub to you schmear on the chubs? lol

picking up 2 growlers of ipa from 2 different local brewers, and i'll cook up a couple pounds of my sausages, staying home w/ the dogs.

Depending on any last minute trips to Atlanta - or the arrival of Gustav - We'll probably be grilling. I've got a hankering for Italian potato salad and a fruity-summery dessert.

I'm going to be in a campground with my nine year old daughter. We'll be grilling up chicken and sausages on the open fire ..... for reasons which are too complicated to mention, I won't be able to make anything ahead of time, so it'll be store bought potato salad - but I will be in a nice agricultural area (Prince Edward County - south of Belleville Ontario) and I should be able to score great corn, apples, maybe even some late stone fruit like peaches.

@chiffonade: Italian potato salad, sounds interesting, so what is it?

We are making Vanilla Bean Ice Cream!

Mom's doing most of the cookin but I think I'll whip up an orzo, tomato, bean and corn salad with honey basalmic vinegarette.

Something that uses up summer produce! I'm going to miss fresh corn...tomatoes and fruit!

Chew on That

Fennel brined pork tenderloin on the grill. These are to die for...

Oh my God--everyone has to click on that Peanut Butter Frosting and Chocolate-Peanut Butter Glaze
from Sky High: Irresistable Triple-Layer Cakes
http://smittenkitchen.com/2008/08/chocolate-peanut-butter-cake/ posted by Jerzee Tomato! That looks so rich, you think you could hardly manage one bite but could probably eat the entire thing in a fit of ecstasy!

On topic, no plans, most of my friends are either away or getting kids ready for school. I'm always sad to see the summer go!

@Heart - you know, it's almost odd -- I don't even like summer, autumn has always been my favourite season, yet I'm always sad to see the summer go too.

I'm actually going all out since it'll be my last Sunday at home. So I'm baking up a storm to bring to church. Here's what I've made so far.

Chocolate Mascarpone Brownies

PB&J Bars (I used homemade strawberry jam)
http://www.bakeorbreak.com/2008/06/27/peanut-butter-and-jelly-bars/

S’More Cookie Bars
http://bakingbites.com/2007/08/smore-cookie-bars/

I'm thinking about possibly going for one of these two as well.

Cinnamon Cheesecake Swirled Blondies

Key Lime Coconut Blondies
http://www.goodeatsblog.com/2007/09/key-lime-coconut-blondies.html

We've got ribeye steaks, coleslaw, grilled zucchini, and potato salad (redskin potatoes, celery, parsley, grainy mustard, mayo, olive oil, cider vinegar - I want cornichons but momma disapproves).
