Ideas for Breakfast Casserole?
My brother and his lady are coming over Sunday for brunch. They are bringing cheap champagne for bellinis, but I'm stuck with making food. I want to do a breakfast casserole/pie thingie with a hash brown crust. Normally I'd use ham or bacon, but big brother converted to Islam ten years ago, so I need to rethink that. I have some loose turkey sausage, but he (and me) were wondering about a steak-and-egg breakfast casserole with a hash browned crust. I'll serve it with some fruit too.

Paula Dean has a quiche recipe using a hash brown crust on FN. And, I don't think it will cause you to require a bypass.

ok-totally not what you asked for, but I made a breakfast casserole from PioneerWoman last week and it was TDF! It doesn't have meat in it-but I added bacon and it was delish.

Foodiemama .. is that the one made with onion rolls? I put that together yesterday and served it for breakfast this morning. AWESOME !!!!!

My family has a Breakfast Casserole we serve on Easter and Christmas, it's nothing unusual or fancy, but you know how tradition enhances certain foods. Line the bottom of a greased pan with bread, cover with cooked, crumbled breakfast sausage (turkey is fine) and diced red pepper and onion. Pour beaten eggs over that, let it sit in the fridge overnight, then top with cheddar cheese and bake. You could probably do hash browns instead of the bread, and skip the 'sit over night' step. (give a yell if you're interested and I'll get more specific with measurements etc.)
I've never thought of doing a steak and egg casserole, but it seems like it would hide otherwise good ingredients - I think of casserole as a way to stretch and improve cheap stuff. Maybe you could do a composed plate with a little hashbrown pancake, topped with a poached or fried egg (using a ring to keep it round) then put a few steak slices on top...almost like a (major) twist on eggs benedict? Not sure what kind of sauce to use in place of hollandaise, but a slice of tomato might be nice in that stack.

and talk about coincidence...i made this for a family reunion. apparently the leftovers (yes-there were leftovers, but only 'cause i did a BIG spread) were eaten with london broil that night by the dad and son who were left to fend for themselves for dinner! There you have it-steak and eggs!

My concern with using leftover steak in a casserole would having the steak become very tough in a baking process. However, I heartily endorse the suggestion of AliceBlue...a couple of slices of steak over the top of a composed plate. Steak can remain tender that way.
In pre-diabetic days, I regularly made a casserole-style breakfast using left-over challah as the base with a wide assortment of meats & veggies. Turkey or chicken sausage with roasted sweet and hot peppers, roasted garlic and carmelized onions was my favorite. Nowadays, that combo goes into my eggbeaters and it still is a great reason to get up in the morning. BTW, fresh herbs...rosemary, thyme, sage & basil are a great way to kick up the flavor.

I've had a breakfast casserole that had hash brown crust, grilled steak (tips are usually inexpensive), scrambled eggs, salsa and cheese. It's really good, quick and easy to make.

@kandecia, your suggestion sounds the best. Unfortunately, my brother stood me up for brunch for the umpteenth time, so if I make this recipe, it will be for me and my friends. Thanks for the suggestion.
