I like to ______ with leftover rotisserie chicken
So, I had Garlic and Butter basted rotisserie chicken last night for dinner (with a pasta salad and mixed steamed herbed veggies). So good. But now, I have a lot of chicken left over. What do you do with your leftover chicken? I was thinking trying to make Chicken Enchiladas (but don't have a recipe)...Maybe Chicken Quesadillas? Any ideas and recipes are welcome!! Thanks :)

My Papa's famous 'chicken frigaseé'!!!
(I'm not sure that's how you spell it)
-Canned Asperagus spears
-Fresh Asperagus
-Pickled Capers
-Canned Mushrooms
--make a sauce from this using some chicken stock, with garlic and onion base, Then fold in the shredded left over chicken.
Pour it over white rice or penne noodles. It's an awesome stew-type meal that lasts a while and utilizes the left over chicken really well!

Our second day of rotisserie chicken always manages to morph into chicken caesar wraps, made with bagged caesar salad and store-bought flatbreads :-)

Whenever I roast a chicken, I usually eat the dark meat for dinner and save the white meat for chicken salad the next day (organic mayo, salt and pepper). The rest of the carcass is frozen to make stock/soup with.

I just made chicken sandwiches with the leftovers (too hot to do anything else, but if it hadn't been, I might have used the carcass for stock)

how about tacos? shred the chicken, make a simple tomatillo or chipotle based sauce, tortillas, and whatever else you like to pile on. my personal favorite is rajas -- roasted polanos sauteed with onions. yum!

I don't do poultry these days, but we still make dishes with chicken leftovers that my husband has:
- pad thai
- various Thai curries
- yaki soba
- chicken noodle soup
When I serve myself, I just pick the chicken out.

I made chicken enchiladas last night with left over chicken breast. I used the recipe from Eat, Shrink, and Be Merry on the Canadian Food Network website - www.foodtv.ca (don't have the exact link handy). I am not normally a "low fat" cooker ( as my waistline can attest) but you know, these were spectacular. I didn't use the sour cream and had full fat cheddar (and used pinto beans rather than black because that is all I had) and I was seriously impressed! In their original recipe, the girls recommended using a rotisserie chicken (for time saving purposes). Check it out!

I like to do a chicken pot pie with the leftovers...
buy a refrigerated pie crust, put the chicken, some chopped garlic, some diced baby new (red) potatoes, baby carrots, a quick homemade gravy (use the congealed drippings from the leftover chicken, butter, flour, chicken stock if you need to get a bit more out of it) or even a good canned organic canned gravy, and I like to put brocolli flowerettes or peas or some other green veggie to round it out...butter the top of the crust, then pop in the oven and bake....it's a great fall-time or winter meal.

all good suggestions here. Since I will add very little new, I will make a handy dandy list:
- chicken pot pie, or empanadas
- the above mentioned fricassee with penne
- shredded and sauteed in olive oil garlic shallot s&p and tossed with farfalle and some grated parm
- chicken salad
- shredded and used in tacos, burritos and / or enchiladas
- added to a veggie soup, or removed from the carcass and reserved, soup made from the bones, then added back in with some matzoh balls
- sliced for sandwiches, wraps, or placed atop some mixed greens with tomato and avocado and a dijon vinaigrette
- ground up and mixed with minced carrot and onion, herbs, some olive oil, seasoned, formed into patties for chicken burgers
Whatever you do, definitely save the bones to make stock. That's one of the best things about roasting a chicken imho.

I like to make my lazy-arse chicken salad w/rotisserie chicken. It's just the chicken meat shredded/chopped/torn apart by my bare hands, mixed with mayo, sambal olek, green onions and celery, with a bit of lime squeezed in (plus a little salt and pepper). Deeeeelicious on a pita, on some salad, or spooned directly from bowl to mouth.
I use it in soup, salads, as a side dish to a plate of couscous... There are no limits to the rotiserrie.
I've been saving carcasses for stock: I've asked my sister and mom to save theirs for me too so that I can make a giant pot of broth that I can share.

I never have any leftover rotisserie chicken to do anything with. Between picking at the carcass while doing dishes, nabbing a wing before finally putting what's left in the fridge, I reduce the whole thing to a pile o' bones so there's nothing left! I'm even one of those freaks who gnaw the gristle! Yum yum!

Asian chicken noodle salad... spaghetti, chicken, green onions, almonds, cole slaw veggies, cilantro and asian dressing...
OR
Chicken Alfredo.. pasta of your choice, cream cheese, parm, mozz, caesar dressing, butter, loads of garlic, sliced mushrooms, parsley.

with me leftovers from rotisserie chicken usually end up in a tortilla/flatbread of some variety, with vegetables, salsa and other such things--tasty, and makes for a super-fast dinner.

I've been freezing carcasses (creepy I know) from the twice-weekly, oh my god what are we going to do about dinner roast chickens, and I now have an awesome batch of stock. (You know the routine--water, bones, peppercorns, salt, chopped vegetables, yada yada.) Frozen in small amounts, no more canned stock.

I'm not a big fan of using roast chicken leftovers in anything other than chicken salad or chicken sandwiches. Of course, the carcass is great for stock, but to me, when I reheat the chicken, no matter how gently, it tastes kind of weird. That's okay though because chicken salad and chicken sandwiches are quite wonderful. Sometimes I just slice it cold and dip it in buffalo sauce and eat. But always cold/room temp, never heated.
