Grilling with Banana Leaves...delicious, healthy & easy...

I found frozen banana leaves in a local grocery. At first, I was so excited I couldn't decide what to wrap ...chicken, fish or pork! I found a Thai recipe to be able to follow the idea of it and came out with a wonderfully moist fish. Has anyone else had the pleasure of cooking with banana leaves? If so, please share your ideas. I'm going to use fish, scallops, large shrimp and squid on the next wrap!

Surprisingly, I found some fresh banana leaves in my local supermarket recently. I considered buying some, but I decided I wouldn't know what to do with them, and didn't know how long they would keep. I may grab them today when I go. Could one replace the parchment in en en papillote cooking with banana leaves?

My mother would sometimes use banana leaves and ginger plant leaves to wrap fish. When she would make mochi from scratch, she would wrap it with the ginger leaves and steam it. The flavor was very mild and quite nice, but probably too subtle for most people though, since she didn't sweeten it very much.

Would actually love to have some banana leaf wrapped fluffy white fish with crushed macadamia nuts sprinkled on top (not really fond of mac nuts, but have to admit it's a pretty decent combo), a very light curry with coconut milk and lemongrass (or even chopped mangoes), and jasmine rice.

Sorry, don't know how long it keeps. My mother would pick the ginger leaves from our yard or the banana leaves from the neighbor's.

In PR we make PASTELES - you make a green banana/plantain mash and fill it with stewed something (beans or mixed vegetables) wrapped in the banana leaf and then covered in parchment. You tie it with kitchen twine and boil it. They're delicious and they're a Holiday staple. They're a hassle to make, with too many steps, but if you're adventourous, maybe you can try it. people make them with mashed yuca too. delicious.

You can also lay them on top of a rice made with pigeon peas while it's cooking... the banana leaves will impart a nice flavor to the rice.

Or you can lay them on top of a tray and place food on top of the banana leaves - this way the you can eat Indian food with your hands... just like they do in India.
