Favorite gluten-free breakfast?
What are your favorite gluten-free breakfast foods? Breakfast is still the most important meal of the day, and it doesn't have to start out with the bland, boring or the "same old." Be creative, and I look forward to hearing replies!

Egg-white and spinach omelete and a wedge of cantaloupe. Yum!

My kids had wheat and yeast allergies so I made a lot of rice flour pancakes, which are delicious with a very nutty flavor. They outgrew the problem but we still make the rice pancakes.
Spoonbread with honey on it is another favorite.

How about scrambled eggs (2 minutes in the microwave!) with cheddar cheese topped with salsa?

Thanks for sharing! I, too, enjoy toast with honey! Yum! I have some other conditions and meds that affect my appetite and ability/desire to eat entire meals, so something light, such as the toast with honey, rice cereal/cornflakes or a banana is perfect. I also enjoy granola (favorite brand thus far is Udis) with milk or in yogurt! Sometimes I have to use nutritional supplements; Ensure is GF, and the best flavor is chocolate!

1. Grill a (carefully chosen) chicken sausage in a pan (cut in quarters, once the long way and once across) or on the griddler, soften four half corn tortillas in the pan, wrap each quarter sausage in a tortilla half and dip in salsa. (Can also throw some peppers or basil into the wrap). Once you get the hang of this, it's a really quick breakfast.
2. Homemade buckwheat pancakes.
3. Depending on your sensitivity, McCann's Irish Oats with a little agave, salt and toasted walnuts.

@Nativerose, be careful with McCann's oats -- most GF people don't consider this product safe. Use Bob's Red Mill oats instead. And be careful of cornflakes -- they contain malt (like Rice Krispies) and are not considered gluten free.

A cheesy but fun way to eat your yogurt, GF granola, and whathaveyou: get out two, fairly large tall glasses. Add a dollop of yogurt, then a spoonful of jam, then more yogurt, then granola, then jam....At the top, either sprinkle some sliced almonds, or drizzle on some honey and fresh fruit. Yum yum.
Also, I love making very soft, tender scrambled eggs with salt, nutmeg, and butter (my Colombian grandmother taught me). They become almost sweet and are a very comforting, welcoming sight on your spoon first thing in the morning.

I believe we should start the day with lots of fruit. So I like to make fruit salads and fruit smoothies - I add sometimes spinach or even bee pollen to add nutrition and energy boosts.

Looking through my friend's Kathleen blog, Kathleen's Vegetarian Kitchen, I found these Chestnut Pancakes and Huevos MotuleƱos that I thought might interest you...

I love eating a warm bowl of grits with either a savory or sweet topping, or even better, some grit cakes with either eggs and salty braised greens or maple syrup and fresh fruit.
