What to do with leftover coconut milk?

Dinner for one or two depending on how much is left.

Masaman or any of the red/green/yellow Thai curries are quick to make (~15 minutes) if you have the paste. If not, it's just a $3 tub that makes 10+ servings.

All you need is what you like in your Thai curries -- potatoes, mangos, mushrooms, green beans, pineapple, bell peppers, chicken, etc. The paste and the coconut milk do most of the work. :)

Make ice cream!

Add some rum and pineapple juice!

Rice pudding!

Add to oatmeal, pancakes, pound cake, custard, flan. Omg I could go on for days. Just add it to something.

I like to mix coconut milk with regular milk and make tapioca. I serve it with rum soaked fresh pineapple. [/yum]

could make rice and peas - actually rice and red beans with coconut milk, lime zest, jalapenos and a little thyme.

Make a coconut mocha frappuccino, the Starbucks drink that introduced me to coffee back when I was in high school.
One part coconut milk, to one part strong, cold coffee, and two parts ice. Add sugar, vanilla, and chocolate syrup or dutched cocoa powder to taste, a pinch of salt, and blend. The thick coconut milk doesn't separate easily from the ice particles, so the drink stays thick, rather than separating into ice and liquid layers. If I feel like gilding the lily, I'll add whipped cream, toasted coconut, and a drizzle of syrup on top. It's one of my favorite summer drinks!

WOW-thank you all for your suggestions. Since my husband loves rice pudding, I think I will put it to use making that for him. I will certainly keep them in mind for the next time I have leftover coconut milk.
