Chilquiles?

When I was in Chicago, I ate a ton of Mexican food. I live in New York, though, where the category is certainly lacking. I love Pinche in Nolita, but what I am really looking for is something I had only once, when I was in the Chi: Chilaquiles. It's a plate of tortilla chips piled with eggs, chorizo, refried beans, salsa, and guac. Breakfast nachos! Couldn't believe something this amazing existed. Can't find it anywhere near me in New York, so I put it to you all:

I grew up with traditional Mexican food and the version of Chilaquiles I've always eaten made by my dad and other Mexican family members sounds very dissimilar to what you're describing. The kind I've always had were simple homemade tortilla chips slathered in a spicy red sauce made with tomatoes and chilies. Sometimes there would be crumbled Oaxa cheese or queso fresco on top, but that was the extent of it.

Barrio Chino on the LES (Broome near Orchard) has chilaquiles like those PumpkinBear describes above.

I don't know if they do a breakfast version, but they serve chilaquiles at El Centro in Hell's Kitchen.

After visiting different regions of Mexico and seeing chilaquiles at every breakfast, I've learned there are as many varieties as there are cooks. Some are better than others. I do prefer the simpler versions with red sauce, onion, queso fresco, and shredded chicken.
