Any good recipes for Rice summer salad or a recipe for "insalata russo".
Does anyone have any good recipes for salads made with white rice something very flavorfull.....My fondest memory was tasting "Insalata Russo", ..prepared by a man from Sicily, ..it was rice, mayo , olives and other stuff wich I can't seem to remember......? Does anyone know of a similar recipe or better yet....a better recipe for rice salad.

Maybe some have their own versions of "Insalata Russo" (russian salad), but I've always seen recipes calling for potatoes, not rice.
There are a lot of recipes out there but I'll just list some of the popular ingredients that may or may not be included with the potatoes and mayo.
Carrots
Peas
Olives
Pickled cucumbers
Chicken
Eggs
Onions
Parsley
Ham
I've never tried replacing potatoes with rice but if it works, it works.

I have seen many recipes for russian salad in cookbooks from many different backgrounds, but never one with rice. Usually it's quite similar to potato salad, plus beets.
I had a polish version with apples once, it was perfect.

I make a rice salad quite often...cucumbers, leave the peel on, remove the seeds, diced, diced tomatoes or sliced grape tomatoes, sliced scallions...dress with a vinaigrette...
VERY refreshing!
