zuchini

Does anyone have any great recipes using zuchini? Especially cookies.

also there was just a post about zucchini that had bunch of suggestions -- don't know about cookies though

I love making Zucchini bread, and I've varied the recipe many times to change it up. My favorite is to add dutch cocoa to the recipe with some buttermilk to soften it, molasses, mini semi-sweet chocolate chips. People who hate zukes like it, and I took it to a kindergarten party in the form of cupcakes and even the kiddies liked it. When I get tired of making it, I start freezing the grated zucchini in pre-measured amounts so it's on hand in the middle of winter.

One of my favorite savory recipes is stuffed zucchini, a good way to get rid of the big 'uns. Scoop it, toss the seeds, grate the good parts, and mix in whatever you like with egg, cheese, and bread crumbs to bind.

I also do a light savory custard....
Saute with hot peppers onions garlic and mushroom, as a side or with pasta...
Slice lengthways, marinate, and grill....

I can't imagine them working well in cookies because of the water content. Let us know if you succeed!

Zucchini Cookies

Zucchini and butterscotch make an interesting pair in this out-of-the-ordinary cookie.
Ingredients

1/2 C. butter, softened
1 C. brown sugar
1 egg
1/2 tsp. vanilla
1 C. flour
1/4 tsp. baking soda
1/4 tsp. baking powder
1/4 tsp. salt
1 small zucchini, shredded
1 C. oatmeal
3/4 C. finely chopped nuts
1/2 C. coconut
1/2 C. raisins
1 C. butterscotch chips
Directions

Preheat oven to 350 degrees. Cream the butter and sugar. Add the egg and vanilla and beat well. Sift the flour, baking soda, baking powder and salt together, and mix into the egg mixture. Add the shredded zucchini. Stir in all remaining ingredients. Drop by tsp. onto a greased cookie sheet. Bake at 350 degrees for 12 - 14 minutes or until cooked. Cool slightly before removing from pan.
