What to do with Raspberries?

I have very unexpectedly become to proud owner of close to 4 pounds of very very very ripe (read practically falling apart and turning to juice) raspberries, with a few gigantic ollaliberries mixed in. Should I make jam? Any other suggestions. They are probably mostly too ripe to eat fresh. Right now I'm leaning towards jam, or either a slightly cooked or raw puree to make into ice cubes. Or possibly a pie.

Sounds good, no matter what you do. I always keep coulis in my freezer to whip out for yogurt, ice cream, cake, drinks, etc.
Jam rocks too....so does pie! I am hungry now!

Are they too far gone looking to add to couscous for a dinner side?

As much as I dislike vinegar, there's always making a dressing out of them too...

Freezer Jam, but today or they'll go moldy.

Add to baked goods - muffins, bread, pie.

Make ice cream.

Then make jam!!!

put them in a blender with some other berries, ice, and lots of vodka or rum. :)

Omit the lemon (I replaced with just a tiny bit of almond extract, but it'd be fine without it) and then pour a little more than half into your pan. Place your luscious sounding raspberries in an even layer, then top with the rest of the batter.

When I made this variation last week, I used a mixture of raspberry jam and fresh raspberries, but it sounds like you can just use the super ripe raspberries!

Macerate them with raspberry flavored vodka and a little sugar and serve it over pound cake. The raspberries soak up a lot of alcohol, and they taste so good. We've done it with strawberries and strawberry flavored vodka. Oh, and don't forget the homemade whipped cream!

or what if you tried infusing vodka?
put vodka in a mason jar with the raspberries, leave for 2-3 days. test, if it's too strong, add simple syrup. if its to weak, simply add more liquor.

Make a philo-dough torte with some custard! Wow that would be nice.
I'm all for fresh preserves though; so jam is also an excellent choice for me.

spooned over ice cream, or make brownies, pour half the batter into the pan, scoop a layer of raspberries over the batter, and top with the rest of the mix...yum!

Raspberry White Chocolate Muffins

These are a fun treat for snack and are just the right amount of sweet.

Ingredients

2 C. Bisquick
1/2 C. white baking chips
1/3 C. sugar
2/3 C. milk
2 Tbs. oil
1 egg
1 C. raspberries

Directions

Pre-heat oven to 400 degrees. Grease bottoms only of a 12 C. muffin tin or use paper liners. Stir all ingredients except berries in a large bowl, just until moistened. Fold in berries. Divide the batter into the 12 cups. Bake 15-8 minutes. Cool 5 minutes, remove from pan. Serve warm. You can sift confectioners' sugar over tops or drizzle a glaze over each muffin.

I like macerating them with a little sugar or agave nectar and some Grand Marnier or Creme de Cassis,vanilla extract & a pinch of black pepper !!!. To go with shortcake and whipped cream. Make a raspberry curd to use as a cake filling or to fold into buttercream works well too.
